Good morning friends. I am so excited that my favorite season is finally here – fall! I went for my run this morning and the air was a crisp 50 degrees with a nice breeze. It was giving some serious fall vibes. This is my absolute favorite weather to run in, and it always reminds me of high school cross-country season.

And while I’m the type of person who has a really difficult time choosing favorites, I can confidentally say that fall is my favorite season. There is just something so fun about wearing warm cozy sweaters, drinking hot coffee in the morning, and running outside on a brisk fall day.

Where I live (Ohio), the fall months are cold enough that I have to layer up when I go outside, but warm enough that I never feel miserably cold. Plus, you get to make yummy fall treats, like the pumpkin spice granola I’m about to share today!

Fall serves as the perfect excuse to make pumpkin themed everything. We’re talking pumpkin pie oatmeal, pumpkin muffins, pumpkin banana bread, and the list goes on. I personally love pumpkin flavored foods. It’s one of my favorite seasonal flavors. The only thing I can’t get behind is pumpkin coffee.

Anyway, back to the granola. This pumpkin spice granola is incredibly delicious, sweet, crunchy, and flavorful. It is literally the perfect fall recipe. Plus, it tastes delicious on top of smoothie bowls, soaked in almond milk, or even eaten as a snack by the handful. The batch I made this morning may or may not already be half gone. What Is Homemade Granola Made Of?

One of the best things about making granola at home from scratch is that you can customize it however you’d like. In general, I like to start with a base of rolled oats and some finely chopped nuts. Then, I add a source of sweetness (pure maple syrup), and any other add-ins that I want. You can add chopped nuts, grains and seeds (such as quinoa, pumpkin seeds, and chia seeds), coconut flakes, and the list goes on. For this recipe specifically, we are going for a pumpkin spice flavor, so we will add canned pumpkin and pumpkin pie spice. In general the flavor profile that you want to achieve will influence which add-ins you choose.

  • Rolled Oats – The first essential ingredient you will need for this recipe are the rolled or quick oats. The oats serve as the main dry base for this pumpkin spice granola. After all, you can’t have granola without the oats.
  • Pecans or Walnuts – The next ingredient you will need for this recipe are the finely chopped nuts. My two favorite nuts to use with this granola recipe specifically are pecans and walnuts. You can use either one (or a combination of both). I think these two nuts compliment the pumpkin spice flavor incredibly well.
  • Pumpkin Pie Spice – The pumpkin pie spice is the key spice used in this granola recipe. It helps give the granola that hint of pumpkin flavor that we are going for. So, it is an essential ingredient that you definitely don’t want to forget.
  • Pure Maple Syrup – The pure maple syrup adds a ton of sweetness and flavor to this recipe. It also helps to add moisture to the granola. Plus, it helps the granola stick together in little crunchy clusters.
  • Canned Pumpkin – The canned pumpkin adds moisture, color, and pumpkin flavor to this granola recipe. It pairs perfectly with the pumpkin pie spice to transform this granola into pumpkin spice granola for the fall and winter seasons.
  • Nut Milk – The nut milk provides the granola with additional moisture and creaminess. I used unsweetened vanilla almond milk, but you can use whichever kind you have on hand or prefer.

Ingredients
  

  • 1 cup rolled oats
  • 2 tbsp finely chopped nuts (I like pecans or walnuts)
  • 1/2 tsp pumpkin pie spice
  • 1/4 cup pure maple syrup
  • 2 tbsp canned pumpkin
  • 1 tbsp nut milk (I used unsweetened vanilla almond milk)

Instructions
 

  • Preheat the oven to 350° F.
  • Add the oats, finely chopped nuts, and pumpkin pie spice to a large bowl.
  • Mix all dry ingredients well to combine.
  • Add the pure maple syrup, canned pumpkin, and nut milk.
  • Mix again until all ingredients are well incorporated.
  • Transfer the granola mixture to a lined or greased baking sheet.
  • Spread the granola out in a thin layer.
  • Bake the granola until golden brown about 18 – 20 minutes.
  • Let the granola cool for a bit.
  • Dig in and enjoy!
