Good morning everyone! Today, I will be sharing one of my favorite little snack recipes with all of you – homemade soft baked peanut butter granola. If there is one thing about me, it’s that I absolutely LOVE granola. Specifically, I love homemade granola. Not only is homemade granola made with lots of love, but it makes your whole kitchen smell amazing. And while there are some storebought granola brands that I really enjoy, nothing beats the taste of fresh homemade granola.

Plus, you get to customize exactly which ingredients you want to add to your granola. Don’t like walnuts? You can easily sub almonds. Not a peanut butter fan? You can use almond butter instead. Allergic to nuts? You can omit them completely and opt for seeds and seed butters. The point is, granola is absolutely delicious and super easy to make at home. So, if you have been wanting to try to make your own granola at home, try this easy soft baked peanut butter granola recipe that I’m about to share.

Ingredients
  

  • 1/2 cup quinoa
  • 1/2 cup rolled oats
  • 2 tbsp walnuts (finely chopped)
  • 1/2 tbsp chia seeds
  • 1/4 tsp cinnamon
  • salt to taste
  • 2 tbsp creamy peanut butter
  • 2 tbsp pure maple syrup
  • 2 tbsp unsweetened applesauce
  • 1/8 tsp vanilla extract

Instructions
 

  • Preheat the oven to 325° F.
  • Mix all dry ingredients together.
  • In a separate bowl, mix all wet ingredients together.
  • Pour the wet ingredients into the dry and mix to combine thoroughly.
  • Firmly press the granola mixture onto a greased or lined baking sheet in a thin, even layer.
  • Bake the granola for about 13 – 15 minutes, or until golden brown.
  • Let the granola cool for a few minutes.
