Good morning everyone! Today, I am so excited to post a delicious oat based recipe. However, this is not your typical microwave or stovetop oats recipe. I know that I have already made and shared many oatmeal recipes on this blog. I have a recipe for strawberry baked oatmeal, a recipe for savory oatmeal, and even a pumpkin pie oatmeal recipe. However, we are switching things up a bit today. I have a brand new recipe to share with all of you – peanut butter and jelly baked oatmeal bars that are packed with flavor.

These bars are perfect to take with you on the go for a quick and delicious vegan breakfast or snack. They are shockingly easy to make, and super budget friendly as well. So, without further ado, let’s get into some quick things to note for this recipe, as well as the list of ingredients you will need to make these peanut butter and jelly baked oatmeal bars a smashing success.


Can You Put Oatmeal In The Oven?

You can absolutely bake your oatmeal in the oven! While it is quite common for people to make their oats in the microwave or on the stovetop, baked oatmeal has become more and more popular over the years. I personally love to make baked oats in the oven for a fluffier, more cake-like texture. While baked oats do take a bit more prep work than microwave oats, I think they are well worth the wait. I love to make baked oatmeal on the weekend when I have more time to cook and bake.

With this baked oatmeal bar recipe specifically, there is a lot less prep work. You don’t have to blend the mixture up because we are making bars rather than a single serve baked oat cake. These creamy peanut butter and jelly baked oatmeal bars are also the perfect recipe to meal prep, as you can easily store them in a container in the refrigerator to enjoy for a quick and delicious breakfast or snack the following day.

Creamy Peanut Butter and Jelly Oatmeal Bars – Ingredients

  • Old Fashioned olled Oats – The old fashioned rolled oats make up the base of this oatmeal bar recipe. The oats provide the perfect texture, and when combined with the peanut butter and jelly, they create a phenomenal flavor. While I do use quick oats in many of my oatmeal recipes, I prefer the texture that rolled oats provide in this oatmeal bar recipe. If you would like to make this recipe gluten free, use your favorite gluten free rolled oats.
  • Cinnamon – The cinnamon is the next essential ingredient you will need for this recipe. Cinnamon is one of my favorite spices, and it is the perfect addition to this delicious baked oatmeal bars recipe. It adds that extra little something that compliments the other ingredients in these PB&J bars.
  • Blueberry Jelly – The blueberry jelly is another ingredient you will need to make this recipe. I used my homemade blueberry jam in this recipe. You can try that recipe out, which I have posted on my blog (link here). It’s super quick and simple, so I highly recommend it. Alternatively, you can use your favorite store-bought blueberry jelly.
  • Creamy Peanut Butter – The creamy peanut butter is another ingredient you will need to make these peanut butter and jelly baked oatmeal bars. I used a natural creamy salted peanut butter. It’s a lot more drizzly, so I highly recommend using a natural one as opposed to the thicker peanut butter options on the market.
  • Nut Milk – The final ingredient you will need for this recipe is the nut milk. This ingredient adds creaminess and moisture to the oatmeal bars. I used unsweetened vanilla almond milk, but you can use whichever kind you have on hand or prefer.

Ingredients
  

  • 1/2 cup rolled oats
  • 1/4 tsp cinnamon
  • 1/2 cup blueberry chia jelly (I used homemade)
  • 1/4 cup + 2 tbsp nut milk (I used unsweetened vanilla almond milk)
  • 2 tbsp creamy peanut butter

Instructions
 

  • Preheat the oven to 350° F.
  • In a mixing bowl, combine the oats, cinnamon, and nut milk
  • Pour half of the oat mixture into a lined or greased miniature loaf pan.
  • Spread 1 tbsp of peanut butter directly on top of the oat mixture.
  • Spread 1/4 cup of blueberry jelly on top of the oat mixture and peanut butter.
  • Repeat with the other half of the oat mixture, followed by the remaining peanut butter and blueberry jam.
  • Bake the oatmeal mixture for about 20 minutes, or until a toothpick inserted comes out clean.
  • Let cool completely before cutting into four equal-sized bars.
