Today’s recipe is for chewy chocolate chip peanut butter granola bars that are bursting with flavor. These granola bars are also the perfect on the go snack.

This recipe is also perfect for meal prep. You can make a big batch of these granola bars and store them in the refrigerator to enjoy throughout the entire week. I like to snack on these granola bars during busy work days.

Anyway, enough on that. Let’s go through some quick things to note for this recipe. Then, we will take a look at all of the ingredients you will need to make this chewy baked granola bar recipe a smashing success!


How Do You Get Granola Bars To Stick Together?

There are many different ingredients you can use to help homemade granola bars stick together. For this vegan granola bar recipe, we use pure maple syrup and creamy peanut butter as the main sources of stickiness. These two ingredients allow everything to come together to form the perfect sticky granola bar mixture. On top of that, they supply this recipe with richness and sweetness, which ultimately helps the granola bars taste perfectly sweet and super flavorful. Of course, you could also use something like agave in place of the pure maple syrup for a similar texture and slightly different flavor profile. Now that we have covered a few quick things to note for this recipe, let’s go through the list of ingredients you will need to make these easy vegan baked granola bars.

Plus, they pair perfectly with the oat flour to form a cohesive dry base for the granola bars. The combination of oats and oat flour also helps the mixture hold its shape so that you can press it into a pan and cut it into bars once it finishes baking.
  • Cinnamon – I don’t know about you guys, but I absolutely love cinnamon. I find that it adds a little something extra to sweet recipes. This chewy baked granola bar recipe is no exception.
  • Pure Maple Syrup – The pure maple syrup adds some sweetness and stickiness to these vegan granola bars. I love using maple syrup in many of my vegan baked goods, and it works very nicely in this granola bar recipe.
  • Creamy Peanut Butter – The peanut butter adds creaminess, flavor, and richness to this recipe. It also helps the bars stick together nicely. You could also substitute another nut or seed butter if you prefer (such as almond butter).
  • Nut Milk – The nut milk adds moisture and creaminess to the granola bars. For this recipe, I used unsweetened vanilla almond milk. However, you can use any nut milk that you have on hand or prefer.
  • Pure Vanilla Extract – The pure vanilla extract helps to amplify all of the wonderful flavors already present in this recipe. However, I know that this ingredient can be a bit pricy. So, you can omit it if you need to.
  • Mini Vegan Semi-Sweet Chocolate Chips – This recipe would not be complete without some chocolate chips. The chocolate chips supply decadent chocolate flavor to these granola bars. They also add some extra sweetness and texture to the bars. You can use whichever vegan chocolate chips you prefer. I used the Enjoy Life mini semi-sweet chocolate chips for this recipe.

Ingredients
  

  • 1/2 cup oat flour
  • 1/2 cup rolled oats
  • 3 tbsp creamy peanut butter
  • 2 tbsp vegan semi-sweet mini chocolate chips (I used Enjoy Life brand)
  • 1 tsp cinnamon
  • 3 tbsp nut milk (I used unsweetened vanilla almond milk)
  • 1 tbsp pure maple syrup
  • 1/2 tsp pure vanilla extract

Instructions
 

  • Preheat the oven to 350° F.
  • Combine the oat flour, rolled oats, and cinnamon in a large mixing bowl.
  • Add the vanilla extract, nut milk, and maple syrup, and mix well to combine.
  • Mix in the creamy peanut butter.
  • Gently fold in the chocolate chips.

  • Tightly pack the granola bar mixture into a parchment lined square or rectangular baking dish.

  • Bake the granola bars for about 20 minutes or until firm.
  • Let the granola bar mixture cool completely before cutting them into six equal sized rectangular bars.
