Good morning friends! Today’s recipe is incredibly simple, tasty, and delicious. You guys know I love my pancakes, but I also really enjoy waffles. So, today I am sharing my peanut butter and jelly stuffed waffle sandwich recipe with all of you. This recipe is vegan (of course), and it can also be made gluten free if you use gluten free oats. This is a single serve recipe, so it’s perfect for those of you who are just making breakfast for yourself.

This recipe features delicious peanut butter and homemade strawberry jelly sandwiched between (and on top of) two tasty waffles. This creates an incredible PB&J flavor combination in each and every bite. I can’t get enough of these waffles, and I think you guys will love them just as much as I do. The use of gluten free oats in this recipe makes for a super budget friendly option, as gluten free flours can get pretty pricy. This recipe also requires less than ten ingredients, so these waffles are very easy to make.


Which Waffle Maker Is The Best?

For this recipe, I used my Dash mini waffle iron. It heats up fast, it’s portable, and my waffles rarely (if ever) stick. It is also super budget friendly (like $10 – $20). There are probably many similar waffle irons on the market, but I haven’t tried any others, so I can’t recommend them.

  • Ripe/Overripe Banana – The ripe/overripe banana adds moisture and natural sweetness to this recipe.
  • Nut Milk – The nut milk acts as the key source of liquid for this recipe which turns the mixture into the perfect waffle batter
  • Baking Powder – The baking powder acts as the key leavening agent in this recipe. It ensures that your waffles turn out nice and fluffy.
  • Creamy Peanut Butter – The creamy peanut butter will be sandwiched between and on top of your waffles. This ingredient helps form the peanut butter and jelly waffle “sandwich”.
  • Fresh Strawberries – The fresh strawberries are used to create a simple and delicious strawberry chia sed jam.
  • Chia Seeds – The chia seeds combine with the fresh strawberries to form the strawberry chia jam, which will then be sandwiched between and on top of your waffles.
  • Pure Maple Syrup (For Topping) – The pure maple syrup is the optional topping you can add to your waffles for extra sweetness. I don’t like my waffles super sweet, so I usually just put a light drizzle on top of mine. The peanut butter and fresh strawberry jam both add a ton of flavor and a bit of extra sweetness to this recipe. The amount of maple syrup you choose to add is really up to you and your personal taste.

Ingredients
  

Waffle Batter

  • 1/2 cup oats
  • 1/2 medium ripe banana
  • 1/4 tsp baking powder
  • 1/2 cup nut milk

PBJ Filling

  • 2 tbsp creamy peanut butter
  • 3 medium fresh strawberries
  • 1/2 tsp chia seeds

Topping

  • pure maple syrup (optional, for topping)

Instructions
 

  • Microwave the strawberries for about 25 seconds, or until heated and soft.
  • Mash the strawberries thoroughly.
  • Mix in the chia seeds.
  • Pop the strawberry chia jam mixture in the fridge for at least 10 minutes to set.
  • Add the oats, banana, baking powder, and nut milk to a high speed blender or food processor.
  • Blend for a few minutes until a smooth batter consistency is achieved.
  • Preheat a waffle maker for a few minutes.
  • Grease the waffle maker on both sides with a bit of olive oiil.
  • Fill the waffle cavity with the batter.
  • Cook your first waffle for about 5 minutes, or until golden brown.
  • Repeat with the remaining batter.
  • Place one waffle on a plate and top it with half of the peanut butter and strawberry chia jam.
  • Add the other waffle directly on top of the peanut butter and jelly.
  • Spoon the remaining peanut butter and strawberry chia jam on top of the second waffle.
  • Add pure maple syrup as desired.
