Good morning everyone! As you guys already know, I absolutely love pancakes. They are one of my favorite breakfast options to enjoy on the weekend when I have a lot more time to cook and bake.

I always try to switch things up by experimenting with different flavors, and a few weeks ago, I decided to try and make some vegan cinnamon roll pancakes. After a few tries and some minor tweaks, I came up with a recipe that is fluffy, sweet, and has the perfect amount of cinnamon flavor.

The cinnamon truly is the star of the show for this recipe. It is used in both the pancake batter and the maple cinnamon filling. Aside from the cinnamon, there are a few key base ingredients I used to make the pancake batter. The main dry ingredient used in this recipe is quick oats. I blended the oats up to form a fine oat four. The oat flour combines perfectly with the other ingredients in this pancake recipe.

  • Cinnamon – This ingredient should come as no surprise. You absolutely can’t have cinnamon roll pancakes without the cinnamon. The cinnamon is used in both the pancake batter and the maple cinnamon topping for an extra strong flavor.
  • Nut Milk – The nut milk is used as the main source of liquid in this pancake recipe. It adds creaminess and moisture to the pancake batter. I used unsweetened vanilla almond milk, but you can use whichever kind you like most or have on hand.

Ingredients
  

Cinnamon Roll Pancake Batter

  • 1 cup quick oats (blended into a fine oat flour)
  • 1/2 tsp baking powder
  • 1/4 tsp cinnamon
  • 1/4 cup + 3 tbsp nut milk (I used unsweetened vanilla almond milk)
  • 1/4 cup unsweetened applesauce

Maple Cinnamon Butter

  • 1 tbsp creamy almond butter
  • 1 tsp pure maple syrup
  • 1/2 tsp cinnamon
  • 1/4 tsp nut milk (I used unsweetened vanilla almond milk)

Instructions
 

  • Add the oat flour, baking powder, and cinnamon to a mixing bowl.
  • Mix all dry ingredients thoroughly.
  • Mix in the nut milk and applesauce.
  • In a small bowl, combine the almond butter, pure maple syrup, cinnamon, and nut milk to form the maple cinnamon butter.
  • Pour dollops of pancake batter onto a greased pan or pancake griddle over low heat.
  • Cook the pancakes for a few minutes on each side until firm.
  • Plate your pancakes and spread some of the maple cinnamon butter on top of each one.
