Microwave the strawberries for about 25 seconds, or until heated and soft.
Mash the strawberries thoroughly.
Mix in the chia seeds.
Pop the strawberry chia jam mixture in the fridge for at least 10 minutes to set.
Add the oats, banana, baking powder, and nut milk to a high speed blender or food processor.
Blend for a few minutes until a smooth batter consistency is achieved.
Preheat a waffle maker for a few minutes.
Grease the waffle maker on both sides with a bit of olive oiil.
Fill the waffle cavity with the batter.
Cook your first waffle for about 5 minutes, or until golden brown.
Repeat with the remaining batter.
Place one waffle on a plate and top it with half of the peanut butter and strawberry chia jam.
Add the other waffle directly on top of the peanut butter and jelly.
Spoon the remaining peanut butter and strawberry chia jam on top of the second waffle.
Add pure maple syrup as desired.
