One flavor combination that I could probably eat for the rest of my life and never grow tired of is peanut butter and banana. When I was in college, one of my typical breakfasts before big races was peanut butter and banana on toast, a bagel, or oatmeal.

I love the quick energy that the peanut butter, banana, and oat combination provides. The flavors go really well together, so why not turn them into a single serve cake? The texture is light, fluffy, and the recipe is naturally sweet.

  • 1/4 cup rolled or quick cook oats
  • 1/2 medium ripe banana
  • 1 tbsp peanut flour (I used PBFit)
  • 1 tbsp creamy peanut butter
  • 1/8 tsp baking powder
  • 3 1/2 tbsp water
  • pure maple syrup (optional, for topping)

Instructions
 

  • Add the oats, water, peanut flour, and baking powder to a high speed blender or food processor.
  • Blend until a smooth batter consistency is achieved.
  • Mash up 1/4 of the ripe banana.
  • Gently mix the mashed banana into your oatmeal batter.
  • Pour the oatmeal batter into a small, microwave safe dish.
  • Slice up the rest of the banana and add it on top of the oatmeal mixture.
  • Add optional chocolate chips, then pop the oatmeal cake into the microwave to cook for 60 seconds.
