Good morning friends and welcome back to the blog! Today, I am sharing a recipe that has become one of my favorite easy lunch/dinner options – a vegan burrito bowl. This recipe also happens to be extremely meal prep friendly. Plus, the ingredients are budget friendly and, most importantly, the recipe is absolutely delicious!

This vegan burrito bowl is also super easy to customize to your personal taste. I like to switch things up depending on what I’m in the mood for and what ingredients I have on hand. Sometimes I’ll throw some pinto beans into the bowl or fry up some tofu to add to this vegan burrito bowl. Regardless, this vegan burrito bowl turns out incredible every single time I make it. So, without further ado, let’s go through some key things to note for this recipe. Then, we will dive into the full list of ingredients you will need to make this vegan burrito bowl.


Are Homemade Burrito Bowls Easy to Make?

Homemade burrito bowls are suprisingly easy to make. They require just a bit of prep work (like cooking your rice and draining/rinsing your beans), but it is very minimal. Plus, you can prep all the ingredients in big batches so that you can enjoy burrito bowls all throughout the work week. Once you have all the ingredients ready to go, you simply have to assemble your burrito bowl. It’s as simple as that.

I will often prep all of the ingredients on a Sunday. I then store them in an airtight container in the fridge. When I’m ready to eat my burrito bowl for lunch or dinner, I simply throw everthing together in a microwave safe bowl and heat it up. With all of the prep work done, my meal is ready to go in just minutes. Now that we have covered that, let’s take a look at the simple list of ingredients you will need to make this vegan burrito bowl recipe.


Simple Vegan Burrito Bowl – Ingredients

  • Leafy Green – The first ingredient you will need for this recipe is your base of greens. You can use whichever kind you enjoy most or have on hand. I typically opt for spinach or romaine lettuce. On the day I took the photos for this recipe, I used some baby spinach.
  • Black Beans – The black beans are the next ingredient you will need for this recipe. They add flavor as well as some carbs and protein to this burrito bowl. They are a staple ingredient for this recipe. However, if you don’t have black beans, you can easily sub another type of bean such as pinto beans or refried beans.
    Brown Rice – The brown rice is another key ingredient you will need for this vegan burrito bowl recipe. You will want to cook your rice on the stovetop until it gets nice and fluffy.
  • Avocado – The avocado acts as the main source of fat for this recipe. It adds a ton of richness and flavor to the burrito bowl. I absolutely love the taste of avocado in savory recipes, and this one is certainly no exception. Alternatively, you could use some pre-made (or homemade) guacamole in place of this ingredient.
  • Cucumber – The cucumber adds a nice refreshing flavor and crunch to this burrito bowl recipe. You will want to slice it thinly before adding it to your bowl.
  • Salsa – The salsa adds a ton of flavor to this burrito bowl. You can either make your own homemade salsa from scratch or use a pre-made salsa. I decided to use my favorite salsa from Trader Joe’s, which is the chunky mild salsa.
  • Hummus – The next ingredient you will want for this burrito bowl is the hummus. I think hummus pairs really well with the other ingredients present in this burrito bowl. It adds a ton of flavor and richness to the bowl.
  • Nutritional Yeast Seasoning – The nutritional yeast seasoning adds a slight nutty/cheesy flavor to this recipe along with a source of vitamin B12. It is the perfect seasoning to top your burrito bowl off with.
  • Salt – The salt adds some extra flavor to this burrito bowl. This ingredient will be added to taste.
  • Pepper – This is another ingredient which you will adjust to your own personal taste.

Ingredients
  

  • 2 cups leafy greens of choice (loosely packed, I used spinach)
  • 1/2 cup cooked brown rice
  • 1/2 cup black beans (drained and rinsed)
  • 1/2 medium avocado (cubed)
  • 1/4 small cucumber (thinly sliced)
  • 2 tbsp hummus
  • 2 tbsp salsa
  • 1/2 tsp nutritional yeast
  • salt to taste
  • pepper to taste

Instructions
 

  • Add the leafy greens, brown rice, black beans, cucumber, and avocado to a bowl.
  • Add the hummus and salsa right on top.
  • Sprinkle on the nutritional yeast seasoning along with any other toppings you'd like (such as vegan shredded cheese or vegan sour cream).
  • Dig in and enjoy!
