Good morning everyone! Today, I am so excited to share a simple, delicious, and nutrient packed quinoa burrito bowl recipe with all of you. This recipe is centered around one of my favorite grains – quinoa. If you don’t know what quinoa is, it is essentially a fluffy, round grain that comes in a variety of colors. The main two varieties that I consume are white quinoa and tri-color quinoa. I don’t taste a huge difference between the two varieties, but I do think the tri-color one is really pretty.

While I wouldn’t say that quinoa is super flavorful on its own, it does taste delicious paired with other ingredients like black beans, corn, avocado, etc. Plus, it’s packed with plant based nutrients. Hopefully, this vegan quinoa burrito bowl recipe will give you a few ideas for how you can incorporate quinoa into your own plant based meals. So, without further ado, let’s dive into the full list of ingredients you will need to make this tasty vegan quinoa burrito bowl recipe.


Vegan Quinoa Burrito Bowl – Ingredients

  • Quinoa – The first ingredient you will need for this recipe is, of course, the quinoa. Quinoa is an awesome plant based grain. It serves as the key base ingredient for this burrito bowl. It cooks up similarly to rice or pasta in that it absorbs the water and fluffs up as it cooks. It is a great base for the beans, veggies, and other tasty ingredients present in this burrito bowl.
  • Olive Oil – The next ingredient you will want for this recipe is the olive oil. The olive oil adds flavor as well as richness and moisture to this recipe. A little bit goes a long way with this ingredient.
  • Black Beans – Another ingredient you will want for this recipe is the black beans. I chose some canned black beans as opposed to dry beans. This cuts down on the prep work. If you choose to use canned beans as well, make sure to drain and rinse them thoroughly before adding them to your burrito bowl. Either way, they pair really nicely with the other ingredients present in this vegan burrito bowl.
  • Yellow Onion – The yellow onion is the first key vegetable which adds a ton of flavor to this burrito bowl recipe.
  • Minced Garlic – This ingredient adds a ton of flavor to your burrito bowl. It is one of my all-time favorite ingredients to add to savory dishes.
  • Salsa – Salsa is another key ingredient which adds a ton of flavor to this burrito bowl. You can use whichever kind you enjoy most. Or, you can even make the salsa from scratch if you’d like. I used a store bought salsa on the day I photographed this bowl, but I also like to make my own homemade salsa when I have the time to do so.
  • Avocado – The avocado is a great source of fat for this recipe. It is another key ingredient which adds flavor, color, and richness to this quinoa burrito bowl. I eat avocado pretty much every day, as it pairs really nicely with almost any savory dish. This quinoa burrito bowl is certainly no exception. So, I made sure to include quite a few slices in my burrito bowl.
  • Greens of Choice – Another ingredient you will need for this recipe is the base of leafy greens. These are hard to see in my photo, as they are hidden underneath all of the other ingredients. Still, they add nutrients and a nice crunch to this burrito bowl. My two favorite greens to use for this recipe specifically are either lettuce or spinach. Of course, you can use whichever greens you prefer or have on hand.
  • Corn – The corn adds a little bit of sweetness to this recipe. It also adds some color to the bowl. I personally love corn, especially in burritos and burrito bowls. So, I just had to include it in this recipe.
  • Onion Powder – The onion powder is the first essential spice used in this recipe for even more onion flavor.
  • Turmeric – The turmeric adds color and flavor to this burrito bowl. It is the next key spice used in this recipe.
  • Nutritional Yeast Seasoning – The nutritional yeast seasoning adds a slight nutty/cheesy flavor to this quinoa bowl. I love to add it to all of my pastas, nourish bowls, and other savory recipes. It is also a great source of Vitamin B12.
  • Salt – A little bit of salt adds even more flavor to this burrito bowl. This ingredient will be adjusted to your own personal taste.

Ingredients
  

  • 2 cups leafy greens (I used lettuce)
  • 1/2 cup black beans
  • 1/4 cup + 2 tbsp shelled edamame soybeans
  • 1/4 cup dry quinoa
  • 1/2 medium avocado (sliced)
  • 1/4 cup corn
  • 2 tbsp salsa
  • 1/2 tsp nutritional yeast
  • 1/4 tsp onion powder
  • 1/8 tsp turmeric
  • 3/4 cup water
  • 1 tsp extra virgin olive oil

Instructions
 

  • Add the quinoa and water to a pot.
  • Bring the quinoa to a boil, then immediately turn heat to low and simmer for about 20 minutes, or until the quinoa is soft and all the water is absorbed.
  • Mix together the quinoa, turmeric, and onion powder, then add the olive oil and mix again.
  • Place the lettuce in a large bowl, then layer the quinoa mixture and all the other ingredients.
  • Dig in and enjoy your healthy quinoa burrito bowl!
