Good morning everyone! Today, I am so excited to share a quick and simple work day lunch recipe with all of you – a loaded burrito bowl with seasoned fajita veggies. This is a recipe that comes together in minutes and tastes incredibe. It is perfect to meal prep in large batches to enjoy throughout the entire work week.

This recipe is certainly packed with flavor, but it is also budget friendly and super simple to make. It is one of my new favorite lunch options, and I really think you guys are going to love it.

Some of my favorite burrito bowl add-ins include avocado, guacamole, vegan cheese, nutritional yeast seasoning, fresh salsa, chopped yellow onion, and cooked tofu.

Burrito bowls are very customizable, so you can really get creative with them and throw in whichever ingredients you enjoy. With this recipe specifically, you’ll be cooking up some fajita veggies to add into your burrito bowl for a bit of extra spice and flavor.

However, if you’re in a rush and you want to make your burrito bowl a bit more quickly, you can always skip the fajita veggies completely and use ingredients like store-bought salsa and guacamole to add flavor to your burrito bowl.

  • Brown Rice – The first essential ingredient you will need to make your burrito bowl is some cooked rice. For this recipe, I went with brown rice. I really enjoy the taste of brown rice, but you could easily sub white rice if you prefer it over brown rice.
  • Black Beans – The black beans are another key ingredient you will need for this burrito bowl recipe. Make sure to drain and rinse them thoroughly before adding them to your burrito bowl.
  • Sliced Bell Pepper – The sliced bell peppers are essential for creating your fajita veggies. I went with a mix of red and green bell peppers for my fajita veggies. The peppers will be cooked with the chopped yellow onion and a couple key spices to create your delicious and flavorful fajita veggies.
  • Chopped Avocado – The chopped avocado adds richness, creaminess, and a source of fat to your fajita vegetable burrito bowl. The avocado is the perfect add-in to include in your burrito bowl. I love to put avocado in many of my savory dishes, and this burrito bowl recipe is certainly no exception.
  • Chopped Yellow Onion – The chopped yellow onion will be cooked up with the peppers until they are nice and soft. These veggies add a ton of flavor and nutrients to your burrito bowl.
  • Garlic Powder – The garlic powder is an important spice that will season your fajita veggies and chopped onion.
  • Chili Powder The chili powder adds a spicy kick to the fajita veggies and chopped onion.
  • Cumin – The cumin is another key spice that adds ample flavor and a bit of spice to the veggies.
  • Fresh Salsa – The fresh salsa is a key topping for your fajita vegetable burrito bowl. You can use whichever salsa you like best. I used a fresh mild salsa that I picked up at my local grocery store. It contains tomatoes, cilantro, salt, onion, and a few spices.
  • Lime Juice – The freshly squeezed lime juice adds a ton of flavor to your burrito bowl. I absolutely love the combination of fresh lime juice and rice. When you add all the other burrito bowl ingredients, you get an absolutely delicious and flavorful burrito bowl. While the lime juice is optional, I definitely recommend it.

Ingredients
  

  • 1/2 cup black beans (drained and rinsed)
  • 1/2 cup cooked brown rice
  • 1/4 medium green pepper (thinly sliced)
  • 1/4 medium red pepper (thinly sliced)
  • 2 tbsp yellow onion (chopped)
  • 2 tbsp chopped avocado
  • 1 1/2 tbsp salsa
  • 1/4 tsp garlic powder
  • 1/8 tsp chili powder
  • 1/8 tsp cumin
  • freshly squeezed lime juice (optional)
  • salt to taste

Instructions
 

  • Add the sliced bell peppers, chopped onion, garlic powder, chili powder, and cumin to a pan with a bit of olive oil.
  • Cover the vegetables with a lid and cook over low-medium heat until soft (about 15 minutes), stirring occasionally.
  • Add the rice, beans, salsa, vegetables, and avocado to a bowl or plate.
  • Add salt and fresh lime juice to taste.
  • Sprinkle on some vegan cheese shreds or nutritional yeast seasoning if desired.
