Good morning friends! It is finally starting to feel like fall where I live, which means that mornings are chilly and I am beginning to crave cozier meals. Soup is one of my favorite side dishes to make for lunch or dinner, so I have been experimenting with soup recipes a lot recently.

I made this delicious homemade tomato soup recipe the other day and it turned out perfect. So, I will be sharing it with all of you in today’s blog post. It is the perfect soup to serve with your favorite sandwich, like a vegan grilled cheese. You can also add homemade croutons or crackers to your soup if you would like.

What To Add To Tomato Soup

When it comes to making tomato soup, there are many things you can add to the dish to make it taste incredible. Aside from your base of tomatoes, you will want to add seasonings like salt and pepper. You can also add oregano and basil, vegetable broth, and beans for creaminess and flavor.

Creamy Homemade Tomato Soup – Ingredients

  • Whole Peeled Canned Tomatoes – The first ingredient you will need for this tomato soup recipe is a can of whole peeled tomatoes. I used a 14.5 ounce can, but you can easily double or triple the recipe if you want to make a really large pot of soup.
  • Cannelini Beans – The cannelini beans are the next key ingredient you need for this recipe. They add flavor, texture, creaminess, and a source of plant based carbs and protein. Make sure to drain and rinse your beans before adding them to your soup mixture.
  • Yellow Onion – The yellow onion adds flavor and nutrients to this recipe. We will be chopping it up and adding it to the blender with our other soup ingredients. We will use a half cup of yellow onion for this recipe, which is about half of an onion. I like to chop my whole onion up and save the other half for other recipes to use later in the week.
  • Vegetable Broth – The vegetable broth acts as the key source of liquid for this recipe. As opposed to water, it has a bit more flavor, which makes it the perfect addition to this creamy tomato soup.
  • Olive Oil – The olive oil adds some richness to this recipe. A splash is all we need to enhance the tomato soup.
  • Nutritional Yeast – The nutritional yeast seasoning adds some vitamin B12 as well as a slight nutty/cheesy flavor to this recipe.
  • Oregano – The dried oregano adds extra flavor to the tomato soup. You can also substitute dried or fresh basil (or use a combination of both).
  • Salt + Pepper – The salt and pepper add extra flavor to your soup. You will add these two ingredients to taste at the end.
  • Optional Toppings – There are a number of optional toppings you can add to your tomato soup, including vegan cheese shreds, homemade croutons, crackers, or pita bread. I served my tomato soup up with some toasted pita bread, which made for the perfect healthy snack. When I want to use the tomato soup as a side dish to make a full meal, I like to serve it up with a sandwich on sourdough bread, such as a vegan grilled cheese.

Ingredients
  

  • 28 oz can whole peeled tomatoes
  • 3/4 cup chickpeas (drained and rinsed)
  • 3/4 cup yellow onion (finely chopped)
  • 2 tbsp nutritional yeast
  • 2 cups vegetable broth (I used low sodium)
  • salt to taste (I used Himalayan pink salt)
  • pepper to taste
  • vegan cheddar cheese shreds (optional, for topping)

Instructions
 

  • Add the tomatoes, chickpeas, chopped onion, nutritional yeast, and vegetable broth to a food processor.
  • Process for a few minutes until smooth.

  • Transfer your mixture to a large pot.
  • Bring mixture to a boil, then simmer on low heat for about 20 minutes.
  • Top with vegan cheddar cheese shreds, fresh basil, or whatever else you'd like.
    Soup Side
  • Serve up hot and fresh and enjoy with a side of sourdough bread, crackers, etc.
