- 2 cups leafy greens of choice (loosely packed, I used spinach)
- 1/2 cup cooked brown rice
- 1/2 cup black beans (drained and rinsed)
- 1/2 medium avocado (cubed)
- 1/4 small cucumber (thinly sliced)
- 2 tbsp hummus
- 2 tbsp salsa
- 1/2 tsp nutritional yeast
- salt to taste
- pepper to taste
Add the leafy greens, brown rice, black beans, cucumber, and avocado to a bowl.
Add the hummus and salsa right on top.
Sprinkle on the nutritional yeast seasoning along with any other toppings you'd like (such as vegan shredded cheese or vegan sour cream).
Dig in and enjoy!
