This vegan lentil salad requires only a few steps. You can easily meal prep the lentils and sweet potato in advance so that all you have to do is assemble everything when you’re ready to eat your salad. But enough on that. Let’s go ahead and go through some quick things to note for this recipe. Then, we will dive into the list of ingredients you will need to make this easy lentil salad recipe a smashing success!


How To Make Lentils for This Salad

Making lentils for your salad is actually quite simple. In general, you simply have to cook your lentils in water over low heat until the water is absorbed and the lentils are soft. You can follow the directions on the lentil package for the ratio of lentils to water as well as the cook time. However, I still recommend watching them closely to ensure that they turn out nice and soft and don’t burn.

Once you finish cooking your lentils, you will want to let them cool a bit and then throw them into your salad. I like to prepare my lentils in advance and store them covered in the refrigerator. That way, they are chilled and ready to add to my salad when I go to make it for lunch in the coming days.   • Greens of Choice – The next ingredient you will need for this salad are your leafy greens of choice. I used some baby spinach in my salad, but you could use lettuce, arugula, or whatever other greens you enjoy most or have on hand.
  • Ground Flaxseed – The next ingredient you will need for this recipe is the ground flaxseed. Ground flaxseed is packed with nutrients, and it pairs really well with the rest of the ingredients in this simple yet delicious vegan lentil salad.
  • Nutritional Yeast Seasoning – You also need nutritional yeast seasoning for this recipe. I personally love putting nutritional yeast seasoning on top of just about every savory meal that I make, and this vegan lentil salad is no exception.
  • Sweet Potato – The next ingredient you will need for this salad is the baked sweet potato. You can microwave it if you want a quick cooking method. Or, you can bake it in the oven at high heats so that it gets super sweet and soft. Either way, you will probably want to complete this step in advance so that the sweet potato has time to chill in the refrigerator before you chop it up and add it to your salad. Plus, it will save you time when you go to assemble your salad because all of the cooking will already be complete.
  • Hummus – Another ngredient you will need for this recipe is the hummus. You can use whichever kind you enjoy most. Some of my favorites are the organic hummus and the roasted garlic hummus from Trader Joe’s.
  • Salsa – Another key ingredients you will need for this salad is the salsa. I like the chunky salsa from Trader Joe’s, and that is the one I used for this lentil salad recipe. However, you can use whichever kind you prefer. You can even make your own homemade salsa from scratch if you’d like.
  • Dressing of Choice – The dressing is the final ingredient which you will add to this salad recipe for even more flavor. I like the green goddess dressing from Trader Joe’s, but I also think a lemon tahini dressing would pair really well with this vegan lentil salad.

Ingredients
  

  • 2 cups leafy greens of choice (loosely packed, I used spinach)
  • 1 medium sweet potato
  • 1/4 cup dry lentils
  • 2 tbsp hummus
  • 2 tbsp salsa
  • 1 tsp ground flaxseed
  • 1 tsp nutritional yeast seasoning
  • 2 tbsp dressing of choice (I like green goddess or lemon tahini dressing)
  • 1/2 cup water

Instructions
 

  • Add the lentils and water to a pot and bring the mixture to a boil.
  • Turn the heat to low and cook the lentils until they are soft and all of the water is absorbed, about 20 – 25 minutes.
  • Wash and dry the sweet potato, then make a few deep cuts in it.
  • Cook the sweet potato until soft using your preferred method (the microwave or oven will work).
  • Let the lentils and sweet potato cool completely.
  • Chop the sweet potato up into small cubes.
  • Place your greens of choice in a large bowl.
