Good morning everyone! Today, I am so excited to share my simple vegan breakfast sandwich recipe with all of you. This breakfast is sandwich is packed with flavor and plant based nutrients. This sandwich also sneaks in some protein from the tofu. Plus, it features a variety of spices for more depth of flavor. This is the perfect savory breakfast option to whip up on busy mornings. Now, let’s go over a few things to note for this recipe. Then, we will dive into the list of ingredients you will need to make this easy vegan breakfast sandwich.


What Sandwich Can You Make with Avocado?

There is no doubt that avocado toast is an extremely popular breakfast food. However, it is not the only recipe you can make with mashed avocado. The vegan breakfast sandwich recipe that I am sharing today serves as proof that you can use avocado in many different ways. A few of my favorite sandwich recipes that utilize avocados include a classic mashed chickpea and avocado sandwich, a veggie sandwich loaded with things like lettuce, tomato, onion, vegan cheese, tofu/tempeh, etc., and of course, this vegan breakfast sandwich that I am sharing with all of you today.


What Does Avocado Go Well With?

In addition to discussing what types of sandwiches you can make with avocado, I also wanted to discuss which ingredients pair really well with avocado. I personally love to pair my avocado with tomato and everything but the bagel seasoning on top of some toast for a simple breakfast option. I also love to thinly slice some ripe avocado and use it on top of loaded salad bowls. Finally, I like to add some avocado to my veggie burritos along with beans, hummus, salsa, etc. Avocado truly is a versatile plant based ingredient that can be used in a wide variety of ways. Now that we have covered that, let’s go through the list of ingredients you will need to make this vegan breakfast sandwich recipe a smashing success.


Vegan Avocado Breakfast Sandwich – Ingredients

  • Sourdough Bread – The first ingredient you will need for this avocado breakfast sandwich is your bread of choice. I went with some fresh sourdough bread for this breakfast sandwich, but you can use whichever bread you like best. I really like the taste and texture of sourdough bread, especially with savory toppings.
  • Avocado – The next ingredient you will need for this recipe is the avocado. Avocado supplies richness, flavor, and nutrients to this vegan breakfast sandwich. Make sure to use an avocado that is perfectly ripe for optimal texture and flavor.
  • Extra Firm Tofu – Another ingredient you will need for this recipe is the tofu. You will want to pan fry it in a bit of oil so that it turns out nice and crispy. The oil will also add flavor and richness to the tofu. The tofu tastes absolutely delicious on this avocado breakfast sandwich, and it adds a source of plant based protein to the meal.
  • Greens of Choice – Another key ingredient that you will need for this recipe are your leafy greens of choice. I often opt for spinach, but I also enjoy arugula or kale. Romaine lettuce is also really tasty on this breakfast sandwich, and it provides the sandwich with a nice crunchy texture. As you can see from the recipe photos, I chose to use kale on the day that I photographed this breakfast sandwich. However, you can use whichever greens you prefer or have on hand.
  • Spices – The next ingredients you will need for this recipe are the key spices. I used cumin, garlic powder, onion powder, turmeric, and nutritional yeast seasoning for this recipe. These spices blend together nicely with the mashed avocado mixture.
  • Salt + Pepper – In addition to the other spices, you can add salt and pepper to taste for even more flavor. I used Himalayan pink salt, but you can use whatever you have on hand.

Ingredients
  

  • 2 slices bread of choice (I used fresh sourdough)
  • 1/2 medium ripe avocado
  • 1/4 package extra firm tofu (1/4 package = about 100 grams)
  • a small handful greens of choice (I love spinach or kale)
  • 1/4 tsp nutritional yeast
  • 1/8 tsp cumin
  • 1/8 tsp garlic powder
  • 1/8 tsp onion powder
  • 1/8 tsp turmeric
  • salt to taste
  • pepper to taste

Instructions
 

  • Gently press as much water as possible out of your block of tofu.
  • Slice the tofu lengthwise into two thick, equally sized pieces.
  • Fry the tofu on a pan with a bit of olive oil over low-medium heat for a few minutes on each side, until the tofu is golden brown.
  • Mash the avocado thoroughly and place it in a small mixing bowl.
  • Mix the spices in with the mashed avocado mixture until well combined.
  • Toast your bread of choice for a few minutes until golden brown.
  • Distribute the avocado mixture evenly between your two pieces of toast.
  • Top each piece of toast with one slice of tofu.
  • Add the greens on top of one side of the toast.
  • Place one piece of toast on top of the other to form a sandwich (or eat it open-faced like I did).
