I recently made some vegan strawberry chocolate chip pancakes that are eggless, gluten free, and vegan, and they turned out so delicious that I knew I just had to share the recipe with all of you. Best of all, this recipe is insanely simple. The pancakes turn out super fluffy and sweet, and I’m so excited for you all to try them.

You can even add vegan whipped cream or maple syrup for a extra sweet stack of pancakes. Or, you could leave the recipe as is for that delicious chocolate strawberry flavor combination. I also wanted to note that these pancakes are made with no banana, so for those who have been requesting a banana free vegan pancake recipe, here it is!

How To Make Healthy Strawberry Pancakes

Making pancakes at home that are both delicious and healthy is much easier than you think. I often use banana in my healthy vegan pancakes recipes, but this one is made without it, as I know some people don’t like the texture/taste of bananas. So, in order to make these pancakes, you just need a few simple ingredients. The base of oats is especially important, as is the baking powder. These ingredients combine to create a light and fluffy pancake batter.

Then, you will add the fresh strawberry slices to the batter for some natural sweetness. Finally, you can get creative with the toppings. If you want your pancakes extra sweet, you can add more fresh fruit, chocolate chips, and/or pure maple syrup.

  • Quick Cooking or Rolled Oats – The first ingredient you will need to make these fluffy vegan strawberry chocolate chip pancakes are the oats. You can use either rolled oats or quick cooking oats. It doens’t matter since we will be blending them up into a fine oat flour to use as the dry base for this recipe. Use your favorite gluten free oats if you want your pancakes to be gluten free.
  • Baking Powder – The next ingredient you will need for this strawberry pancake recipe is the baking powder. This ingredient ensures your pancakes turn out nice and fluffy. It is the key leavening agent in this recipe, so you definitely don’t want to forget it.
  • Nut Milk – The third ingredient you will need for these healthy, gluten free, strawberry pancakes is the nut milk. I used unsweetened vanilla almond milk, but you can use whichever kind you have on hand or enjoy most.
  • Fresh Strawberries – Another ingredient you will need for this recipe is the fresh strawberries. The fresh strawberries add a ton of natural sweetness, flavor, and nutrients to this recipe. You will want to thinly slice them and fold them into your batter gently so that you get a nice even distribution of strawberries. Ingredients
  

  • 1/2 cup rolled or quick cook oats
  • 3 – 4 medium strawberries
  • 1 tbsp dark chocolate chunks
  • 1/4 tsp baking powder
  • 1/2 cup nut milk (I used unsweetened vanilla almond milk)
  • 1 tbsp creamy peanut butter
  • pure maple syrup to taste (for topping)

Instructions
 

  • Add the oats, baking powder, and nut milk to a high speed blender or food processor.
  • Blend until a smooth consistency is achieved.
  • Thinly slice your strawberries.
  • Gently fold the strawberries and chocolate chips into your pancake batter.
  • Add dollops of batter onto a greased pan or pancake griddle over low heat.
  • Cook the pancakes for a few minutes on each side until golden brown.
