Good morning everyone! Today’s recipe is a super versatile one that I think you will really enjoy. I don’t have many salad recipes on the blog, so I’m going to share one of my favorites with you guys today :). Whenever I eat a salad, it’s usually a sweet potato or lentil salad bowl. If I’m eating a salad as a meal, I like to load it up with things like sweet potato, tofu, lentils, beans, etc. so that it keeps me full.

However, I also enjoy side salads that aren’t made with a base of leafy greens. This cucumber, tomato, and avocado salad is packed with green veggies and flavor. It is perfect to serve up with any meal. It’s also great to pair with crackers or chips.


Cucumber Tomato Avocado Salad – The Perfect Side

While this avocado cucumber tomato salad is definitely not a main dish, it compliments savory dishes extremely well. It can also be used on top of rice cakes, toast, etc. for a quick and easy snack. I personally love to pair this salad with a sandwich for a quick and easy lunch. I make this cucumber, tomato, and avocado salad in big batches so that I have enough to eat throughout the entire work week.

I am actually home with my parents right now, and I just made this recipe for my whole family to enjoy. It was definitely a huge hit, as the entire batch is pretty much gone after just a few days. If you are just making a batch of this for yourself, you can easily prep a huge bowl of it and store leftovers in an airtight container in the refrigerator to enjoy throughout the work week. I find that it stays pretty fresh for a few days after I make it, so long as I store it in an airtight container in the refrigerator with a lid. Anyway, enough on that. Let’s take a look at all the ingredients you will need to make this simple and healthy salad recipe a smashing success!


Refreshing Cucumber Tomato Avocado Salad – Ingredients

  • Cucumber – The cucumber is one of the main ingredients used in this recipe. It is super hydrating, refreshing, and it makes the perfect base for this salad.
  • Ripe Avocado – The avocado adds richness, creaminess, and flavor to this recipe. It is absolutely perfect paired with the cucumber. One medium avocado is the ideal amount for this recipe. Make sure your avocado is nice and ripe, but not too mushy. You will want to chop it up into small cubes.
  • Yellow Onion – You will also need some chopped yellow onion for this recipe. I personally love yellow onion. It adds a lot of flavor as well as that extra crunch factor to this recipe, which makes it the perfect addition.
  • Red Tomatoes – I always splurge on organic tomatoes from the grocery store because I think they taste immensely better than the non-organic ones. Farmer’s market tomatoes (or fresh from the garden ones) have the best flavor, but I don’t always have access to those. For this salad, I used organic tomatoes on-the-vine from my local grocery store. The tomatoes add both color and flavor to this salad.
  • Lemon and Lime Juice – These act as the “dressing” for your salad. I use a mix of lemon and lime juice for the best flavor. This pairing is perfect because it is light and refreshing. It adds a ton to the cucumber, tomato, and avocado salad. In my opinion, these juices are the secret to really elevating the dish.
  • Salt and Pepper – A little bit of salt and pepper provide this side salad with a bit of extra flavor. These ingredients will be added to you personal taste. I have never enjoyed super salty food, so I tend to add less salt than most people.

Ingredients
  

  • 1 large English cucumber
  • 1 medium avocado
  • 2 medium tomatoes (I used organic tomatoes on-the-vine)
  • 1/4 cup chopped yellow onion
  • 1 1/2 tsp lime juice
  • 1/2 tsp lemon juice
  • salt to taste (I used Himalayan pink salt)
  • black pepper to taste

Instructions
 

  • Finely chop your cucumber, avocado, yellow onion, and tomatoes.
    Chop Cucumber
  • Add the chopped cucumber, avocado, tomato, and onion to a large mixing bowl.
    Cucumber Salad Mix
  • Mix all ingredients to combine thoroughly.
  • Add in the lemon and lime juice, and mix again.
  • Add salt and pepper to taste.
  • Serve the salad up with chips, crackers, on top of rice cakes, or with whatever else you'd like!
