You will absolutely love how quickly this recipe comes together. Plus, it is the perfect time to make this recipe, because peaches are in-season during the summer. The flavor combination of the vanilla protein, sweet peaches, and oats has been my go-to for the last few weeks. I hope you all enjoy this recipe just as much as I do.

A question I hear a lot from people who are new to cooking with oats is how to make baked oats in the oven. Most people prefer to make their oatmeal in the microwave or on the stovetop, but making baked oats is an easy way to switch things up. It actually isn’t as difficult as it sounds. In general, you can make baked oats by blending up all your ingredients in a high speed food processor or blender, pouring them into an oven safe dish, and then baking them in the oven.

The consistency you are aiming to achieve with your baked oats will affect the total time you want to bake them for. In general, if you want gooier oats on the inside, you will bake them a shorter length of time. If you want the oats to be more cakey, you will bake them for a bit longer. This makes baked oat recipes highly customizable to your own taste, which is one of the reasons I love them! Peaches and Cream Baked Oatmeal – Ingredients

  • Quick Cook or Rolled Oats – The first ingredient you will need for this recipe is oats. I don’t think this ingredient surprises anyone, but it is still the most essential ingredient. I used quick cook oats, but you could also use rolled oats. Either one will work for this recipe.
  • Vegan Vanilla Protein Powder – The second ingredient you will need for this recipe is a vegan vanilla protein powder. This will help give your oats that classic vanilla “cream” flavor. It also adds some protein for extra satiety. You can use whichever one you’d like, but just make sure you enjoy the taste of it. I used the Orgain simple vanilla protein powder. I really enjoy the taste of it.
  • Nut Milk – The third ingredient you will need for this recipe is the nut milk. As per usual, I used unsweetened vanilla almond milk. You can use whichever nut milk you enjoy most or have on hand. You could probably also use oat milk, although I haven’t tried it.
  • Baking Powder – The fourth ingredient you will need for this recipe is the leavening agent. In this case, we are using baking powder to ensure our baked oatmeal rises nicely. This ingredient will give the oatmeal that fluffy, cake-like texture. It is an essential ingredient that you definitely do not want to forget.
  • Cinnamon – You will also need cinnamon for this recipe. This ingredient adds that perfect extra spice and blends really well with the other ingredients.
  • Fresh Peach – Another ingredient that you will need for this recipe is, of course, the fresh peach. Make sure your peach is nice and ripe. It should be soft to the touch (not firm). This ingredient adds that classic peach taste, and it also adds a ton of natural sweetness to this oatmeal recipe.
  • Almond Butter – The almond butter adds richness and flavor to the oatmeal. It is one of the key toppings for this recipe.

Ingredients
  

  • 1/3 cup quick oats (blended into a fine oat flour)
  • 1 scoop vegan vanilla protein powder (1 scoop = 19g, I used Orgain Simple)
  • 1/4 tsp baking powder
  • 1/4 tsp cinnamon
  • 1/4 cup + 2 tbsp nut milk (I used unsweetened vanilla almond milk)
  • 1 tbsp almond butter (for topping)
  • 1 medium ripe peach (finely chopped)
  • 1 tbsp vegan whipped cream (for topping)
  • pure maple syrup to taste (optional, for topping)

Instructions
 

  • Preheat the oven to 350° F.
  • In a large mixing bowl, combine the oat flour, protein powder, cinnamon, and baking powder.
  • Add the nut milk and mix again to form a smooth oatmeal batter.
  • Gently fold in the chopped peach, reserving some pieces for topping the oatmeal with.
  • Pour the oatmeal batter into an oven safe dish or ramekin.
  • Add the remaining chopped peach on top of the oatmeal.
  • Bake the peaches and cream oatmeal for about 25 minutes, or until your desired consistency is achieved.
  • Let the oatmeal cool for a bit.
  • Top the oatmeal with the almond butter, vegan whipped cream, and optional pure maple syrup to taste.
  • Dig in and enjoy!
