Vegan Baked Strawberry Oat Bites

Good morning everyone! Today, I will be sharing my vegan baked strawberry oat bites recipe with all of you. This recipe actually requires no yeast. Also, instead of frying these strawberry oat bite “donut holes”, we will be baking them in the oven. The end result are delicious strawberry oat bites that are perfect to pack up and take with you on the go to school, work, etc.

By using just a few simple ingredients, we can avoid the hassle of making these oat bites with yeast. As a result, you don’t have to wait for the dough to rise. This makes the recipe quick, easy, and simple to whip up.

I chose to fill these oat bites with freeze dried strawberries, as strawberries are one of my favorite fruits. However, you could easily swap the freeze dried strawberries for freeze dried blueberries to make a blueberry oat bite flavor. I do recommend using freeze dried fruit as opposed to fresh or frozen fruit though. This will prevent your oat bites from getting mushy as they bake, as the freeze dried fruit doesn’t have the moisture that fresh/frozen fruit does.

Also, in order to make this recipe gluten free friendly, I used oat flour. The use of oat flour also makes the recipe super budget friendly.

After making these strawberry oat bites, I already have ideas for other flavor combinations that I’d love to try out. Chocolate chip oat bites, blueberry baked oat bites, birthday cake oat bites, and peanut butter oat bites are just a few flavor combinations that I want to test out. With just a few key swaps, you can pretty much tweak this recipe to make any oat bite flavor that you would like. That’s the beauty of this recipe.

Baked Oat Bites Recipe – Ingredients

  • Quick Oats – The first ingredient you will need for this recipe is the oats. You will be blending the oats up in a high speed blender to form a fine oat flour. The oats serve as the main base for this baked oat bites recipe. If you don’t have quick oats, you can sub rolled oats. To make these strawberry oat bites gluten free, use your favorite gluten free oats.
  • Freeze Dried Strawberries – The next ngredient you will need for this recipe are the freeze dried strawberries. The freeze dried strawberries add sweetness, color, and flavor to this recipe. I do not recommend subbing fresh or frozen strawberries, as they will contain a lot more liquid. This could cause your oat bites to turn out mushy, which is not what we are going for with this recipe.
  • Powdered Sugar – The powdered sugar adds a ton of sweetness to your oat bites. You will be rolling the oat bites in the powdered sugar before you pop them in the oven to bake.
  • Baking Powder – The next ingredient you will need for this recipe is the baking powder. This will help your oat bites achieve a ligther, fluffier texture. It is an essential leavening agent that you definitely do not want to forget.
  • Pure Maple Syrup – The pure maple syrup provides the oat bites with additional sweetness. It also helps the bites stick together when you roll them up into little spherical shapes.
  • Non-Dairy Milk – The non-dairy milk is another important ingredient you will need for this recipe. This ingredient adds moisture and creaminess to your oat bites. You can use oat milk or nut milk. I used vanilla oat milk, but you can use whichever non-dairy milk you have on hand or enjoy most.
  • Melted Coconut Oil – The melted coconut oil adds a ton of moisture to the oat bites. It helps them roll into spherical shapes with ease.

Ingredients
  

  • 1/2 cup quick oats (blended into a fine oat flour)
  • 2 1/2 tbsp freeze dried strawberries (finely chopped)
  • 1/2 tbsp powdered sugar
  • 1/4 tsp baking powder
  • 2 tbsp pure maple syrup
  • 1/2 tbsp non-dairy milk (I used vanilla oat milk)
  • 1 tsp melted coconut oil (measure after melting)

Instructions
 

  • Preheat the oven to 350° F.
  • In a mixing bowl, combine the oat flour and baking powder.
  • Add in the pure maple syrup, non-dairy milk, and melted coconut oil, and mix well to form a thick dough.
  • Gently fold in the chopped freeze dried strawberries.
  • Roll the dough into six equal sized spheres.
  • Roll each dough ball in powdered sugar, then place them on a lined or greased baking sheet.
  • Bake the oat bites for 12 minutes.
  • Let the bites cool for a bit.
