Whenever I want to end my night with something that is both simple and sweet, this chocolate oat protein mug cake is my go to option. It is super delicious, packed with chocolate flavor, and it has the perfect fluffy texture. It contains no dairy, it can be made gluten free, and it also has a good amount of protein.

I honestly can’t believe I didn’t share this recipe on my blog sooner because I have been making it for such a long time. Better late than never, am I right? And I don’t know about you guys, but I simply can’t end my night without dessert. While I do often have baked desserts already made up, sitting in my refrigerator ready to eat, that isn’t always the case. On those occasions, quick and healthy microwave dessert recipes like this one truly do come in handy.

In my opinion, they have the best taste and texture out of the (many) different vegan protein powders I have tried.
  • Baking Powder – The next ingredient you will need for this recipe is the baking powder. The baking powder acts as the key leavening agent to ensure that your mug cake turns out nice and fluffy. An airy texture is super important for any chocolate cake recipe, and this vegan chocolate mug cake is no exception.
  • Vegan Chocolate Chips – Another essential ingredient you will want for this recipe is chocolate, or more specifically, chocolate chips. Chocolate chips add extra sweetness and rich chocolate flavor to the mug cake. I used a combination of dark chocolate chips and mini semi-sweet vegan chocolate chips for this mug cake recipe, but you can use whichever kind you have on hand or enjoy most.

Ingredients
  

  • 3 tbsp chocolate protein powder (I used Orgain simple in the chocolate peanut butter cup flavor)
  • 2 tbsp oats (blended into a flour)
  • 1/2 tbsp chocolate chips (I used both semi-sweet and dark chocolate chips)
  • 1/8 tsp baking powder
  • 3 1/2 tbsp water

Instructions
 

  • Add the protein powder, oat flour, and baking powder to a microwave safe dish, and mix to combine.
  • Add in the water, and mix again.
  • Top the mixture with the chocolate chips.
  • Microwave your mug cake for 75 – 90 seconds, or until firm.
