Creamy Vegan Avocado Sauce Pasta

Good morning everyone! I am taking a little break from posting baked oat recipes because I wanted to switch things up. I know you guys do not want to see baked oat recipe after baked oat recipe, but I do have a few more to come eventually.


Meanwhile, you can enjoy this delicious vegan pasta recipe that I am about to share with you all. I am so happy with how it turned out because it is creamy, delicious, and packed with nutrients. This dish has the perfect balance of carbs, proteins, and healthy fats, because I used the avocado in the cream sauce for some healthy fats, and the chickpea pasta for some carbs and protein.


Now, if you don’t want to use chickpea pasta because it is either too expensive, or you don’t like the taste of it, that is completely fine. What you can do instead is use whole wheat pasta, and add your favorite proteins source, whether it be tofu or pumpkin seeds or anything like that.


However, I just so happened to have some Banza chickpea pasta noodles sitting in my pantry, so I thought they would be perfect for this recipe. They ended up working amazingly well in this avocado sauce pasta recipe. I went with the macaroni elbows because I really like that pasta shape for use with sauces (not just vegan macaroni and cheese, although that dish is spectacular as well!).


Now, let’s dive right into what you guys are here for – the healthy, creamy, vegan avocado sauce pasta.


Creamy Vegan Avocado Sauce Pasta – Ingredients

  • Pasta – The first ingredient you will need for this recipe is the pasta. I have already discussed this a bit, but just use whichever pasta you enjoy. For a super healthy pasta dish, choose a whole wheat pasta over an enriched pasta. For an extra protein packed dish, choose a bean or lentil-based pasta.
  • Nut Milk – The next ingredient you will need for this recipe is the unsweetened nut milk. I used unsweetened original almond milk for this recipe, and it was the perfect one to make a nice and creamy sauce. I definitely do not recommend using an unsweetened vanilla flavored almond milk or other flavored nut milk because you will be able to probably taste that vanilla in the sauce and I just think it would be a little bit weird.
  • Mashed Avocado – You will also need the mashed avocado for this recipe. For a stronger avocado taste and a bit of a thicker sauce, you can add a little bit of extra mashed avocado than what I have listed.
  • Extra Virgin Olive Oil – The next ingredient you will need for this recipe is the olive oil. The olive oil adds a little bit of extra healthy fat, a rich flavor, and another liquid source to the sauce. I used extra virgin olive oil for this recipe.
  • Nutritional Yeast Seasoning – The next ingredient you will want for this recipe is the nutritional yeast. The nutritional yeast is a great source of vitamin B12, and it also adds a slight nutty/cheesy flavor to the sauce. It is a very slight flavor, but it really does add a little something extra to the sauce, as well as some nutrients.
  • Key Spices – The final thing you will need for this recipe are a couple of key spices. In this recipe, we will be using both paprika and onion powder to add some additional flavor to the sauce. These two spices add a lot of dimension to the creamy avocado sauce.
  • Optional Toppings – The two optional toppings which you can see in my photos are the fresh basil and the cherry tomatoes. While these toppings are optional, I highly recommend them because they add not only a ton of flavor, but also some beautiful color to your pasta dish.

Ingredients
  

  • 4 oz. pasta of choice (I used Banza macaroni elbows)
  • 1/4 cup mashed avocado (can use more for a thicker sauce)
  • 1/2 tsp nutritional yeast
  • 1/4 tsp onion powder
  • 1/4 tsp paprika
  • 1/2 cup nut milk (I used unsweetened almond milk)
  • 1 tsp extra virgin olive oil
  • cherry tomatoes (optional, for topping)
  • fresh basil (optional, for topping)

Instructions
 

  • Add your pasta to a small pot and cover completely with water.
  • Bring your pot of pasta to a boil on the stovetop, and boil for about 10 minutes, or until the pasta is soft.
  • While the pasta is cooking, add the avocado, nut milk, oil, nutritional yeast, paprika, and onion powder to a high speed blender or food processor.
  • Blend for a few minutes until smooth and well combined, then set aside.

  • Drain and rinse your pasta thoroughly, then transfer it over to a mixing bowl.
  • Pour the avocado sauce over your pasta, and gently mix to combine.
  • Plate your pasta, then top with fresh basil and some halved cherry tomatoes.
