Bring the quinoa to a boil, then immediately turn heat to low and simmer for about 20 minutes, or until the quinoa is soft and all the water is absorbed.
Mix together the quinoa, turmeric, and onion powder, then add the olive oil and mix again.
Place the lettuce in a large bowl, then layer the quinoa mixture and all the other ingredients.
