You just have to mix all the ingredients together, pop the bites in the refrigerator to chill, and then dig in and enjoy! This is one of my new favorite recipes to meal prep because it’s quick, easy, and the bites store nicely in the refrigerator for a couple of day. If you’re looking for a delicious little snack or dessert, this recipe is for you.

Peanut butter has a very strong peanut flavor, whereas almond butter is a bit less powerful.

Ingredients
  

  • 3/4 cup quick oats (blended into a fine oat flour)
  • 1/2 tbsp cocoa powder (I used Hershey's special dark)
  • 1 tsp chia seeds
  • 1 1/2 tbsp chocolate chips (I used dark chocolate chunks)
  • 2 tbsp creamy almond butter
  • 2 tbsp pure maple syrup
  • 1 tbsp nut milk (I used unsweetened vanilla almond milk)
  • 1/2 tsp melted coconut oil

Instructions
 

  • Add the quick oats, cocoa powder, and chia seeds to a bowl.
  • Mix all dry ingredients to combine thoroughly.
  • Make a well in the center of the bowl, then add in the pure maple syrup, almond butter, nut milk, and melted coconut oil.
  • Mix the liquid ingredients well to combine.
  • Slowly mix the wet ingredients into the dry to form a thick cookie dough.
  • Gently fold in the chocolate chips.
  • Divide the dough into seven equal pieces, then roll each one into a ball.

  • Place the balls on a plate and pop them in the refrigerator to chill for about an hour.
