No Boil Vegan Pasta Bake

Good morning friends! It has been a little while since I shared a pasta recipe on the blog, so I’m excited to share a tasty baked pasta dish today. I have been testing this no boil pasta recipe for a little while, and it took me a few tries to get it perfect. No boil pasta can be a bit tricky since you are putting the pasta in the oven uncooked. You want to make sure it still turns out nice and soft, just like it would if you were to boil it.

Through trial and error, I have finally fine-tuned my baking method to achieve the most delicious, flavorful, no boil pasta dish packed with veggies and nutrients. This baked pasta is incredibly nutritious and much easier to make than you might think.

Now, let’s go over some quick things to note for this recipe, as well as the list of ingredients you will need to make this no boil baked pasta a smashing success.


Do You Have To Boil Pasta Before Baking?

This is, understandably, a very common question. When you think of making pasta, the first thing that probably pops into your head is boiling some water on the stovetop, maybe adding a little bit of salt, and then cooking the pasta until soft. However, there actually is another way you can cook pasta that requires no boiling. The method that I am referring to is baking your pasta in the oven with other key ingredients such as diced tomatoes, water, oil, veggies, seasonings, etc. You simply add your uncooked pasta to a square or rectangular baking dish with all of the other ingredients. Then, you end up with a flavorful baked pasta dish.


Can Pasta Be Cooked In The Oven?

Pasta can absolutely be baked in the oven, and this recipe is proof of that. While pasta is often cooked on the stovetop, that doesn’t mean that the stovetop method is the only way to go. I personally love to make vegetable pasta dishes in the oven because the veggies get really soft and all the flavors come together really nicely. I think both cooking methods are great depending on what kind of pasta dish you are trying to make. For this recipe specifically, the no boil method is the way to go.

Now that we have covered a few quick things to note for this recipe, let’s jump into the list of ingredients you will need to make this oven baked vegetable pasta recipe.


No Boil Vegan Pasta Bake – Ingredients

  • Spaghetti – The spaghetti is the first essential ingredient you will need for this pasta dish. I find that spaghetti works best for this recipe. I used whole wheat spaghetti.
  • Chopped Zucchini – The chopped zucchini is the first vegetable you will need for this recipe. It adds both flavor and nutrients.
  • Chopped Yellow Onion – The chopped yellow onion is another vegetable that tastes delicious in this recipe.
  • Spinach – The spinach adds nutrients and color to this baked pasta dish.
  • Fresh Garlic – The fresh minced garlic adds a ton of flavor to this recipe as well as an incredible aroma.
  • Dried Oregano – The dried oregano is one of the key spices that flavors the pasta.
  • Garlic Powder – The garlic powder is another essential spice for this recipe.
  • Fire Roasted Diced Tomatoes – The fire roasted diced tomatoes serve as one of the key sauce ingredients.
  • Water – The water is the other source of liquid used in this recipe to help the pasta bake and soften.
  • Extra Virgin Olive Oil – The olive oil is added to this recipe for extra flavor and richness.
  • Salt – The salt is added to taste to help flavor this pasta dish.
  • Pepper – The black pepper is another spice that you will add to taste to flavor your pasta.
  • Nutritional Yeast Seasoning – The nutritional yeast seasoning will be added on top of the pasta for a slight nutty/cheesy flavor. You can also add some vegan cheese if desired.

Ingredients
  

  • 4 oz spaghetti (I used whole wheat)
  • 1/2 cup finely chopped zucchini
  • 3 tbsp chopped yellow onion
  • 1/4 cup tightly packed spinach
  • 1 clove fresh minced garlic
  • 1/4 tsp dried oregano
  • 1/4 tsp garlic powder
  • salt to taste
  • pepper to taste
  • nutritional yeast seasoning (for topping)
  • 1 3/4 cups fire roasted diced tomatoes
  • 1 cup water
  • 1/2 tbsp extra virgin olive oil

Instructions
 

  • Preheat the oven to 350° F.
  • Add the spaghetti to the bottom of a square or rectangular baking dish.
  • Pour the diced tomatoes and water directly on top of the spaghetti.
  • Add the olive oil, chopped yellow onion, chopped zucchini, minced garlic, garlic powder, dried oregano, and salt + pepper to taste.
  • Mix all ingredients well to combine.
  • Add the spinach on top.
  • Cover the pan wth aluminum foil, then bake the pasta covered for 15 minutes.
  • Remove the aluminum foil, give the pasta a good mix, and bake it for 20 more minutes uncovered.
  • Remove the pasta from the oven and give it one more good mix.

  • Top the pasta with nutritional yeast seasoning and/or vegan cheese.
