These energy bites are also easy to pack up and take with you to school, work, or your favorite weekend relaxation spot. The bites are super moist, chewy, and delicious. Ingredients
  

  • 3/4 cup quick oats (blended into a fine oat flour)
  • 1 tbsp miniature semi-sweet chocolate chips
  • 1 tsp chia seeds
  • 2 tbsp creamy peanut butter
  • 2 tbsp pure maple syrup
  • 1 tbsp nut milk (I used unsweetened vanilla almond milk)
  • 1/2 tsp melted coconut oil

Instructions
 

  • Combine the oat flour, chia seeds, and chocolate chips in a mixing bowl.
  • Make a well in the center of your bowl.
  • Add in the peanut butter, pure maple syrup, nut milk, and melted coconut oil.
  • Mix all liquid ingredients to combine.
  • Slowly mix the wet ingredients into the dry to form a thick, sticky dough.
  • Roll the energy bite mixture into six spheres with clean hands.

  • Place the energy bites on a plate, then pop them in the refrigerator for at least an hour to chill and set.
