Good morning friends! It has been a little while since I posted my last recipe, so I’m bringing you a quick, simple, and delicious no bake recipe this morning. Today, I am sharing my tasty black bean and corn salad recipe. It’s insanely easy to make and it involves very little prep work. All you have to do is chop up a few veggies, rinse a can of beans, and throw everything together in a large bowl. This dish makes the perfect side to any meal.

So, let’s go ahead and take a look at some quick things to note for this recipe. Then, we will jump into the list of ingredients you will need to make this recipe a smashing success.


How Do You Make Corn Salad With Black Beans?

Making a simple corn salad with black beans is actually extremely easy. There are no complicated steps, and you don’t have to cook or bake anything. You’ll start by adding your corn and black beans to a mixing bowl. Then, you can add whatever else you’d like. Some of my favorite add-ins are chopped tomatoes, chopped cucumber, avocado, vegan cheese, and some seasonings.

With this salad specifically, I added cucumber, avocado, and tomato as the fruits and veggies. Then, I seasoned the mixture and added some vegan cheese for additional flavor. It really is as simple as that.

There are many different foods that pair incredibly well with black beans. If you want to make a burrito bowl, you can pair your black beans with tomatoes, avocado, salsa, rice, lettuce, etc. If you want to make a salad such as the one I’m sharing today, you’ll want to add a few key fruits and veggies, vegan cheese, and some seasonings. In general, black beans are one of those really versatile ingredients that can be used in many different ways. I like to keep a couple cans stocked in my pantry at all times to use in recipes such as soups, salads, nourish bowls, etc.

Vegan Black Bean and Corn Salad – Ingredients

  • Black Beans – The black beans are the first essential ingredient you will need for this recipe. This should come as no surprise, as they serve as a solid base for this salad. You’ll want to drain and rinse them thoroughly before adding them to your mixing bowl.
  • Sweet Yellow Corn – The sweet yellow corn is another important ingredient for this salad. It pairs incredibly well with the black beans. You can use either canned corn or frozen corn that you have already cooked up. If you want to skip the cooking step, canned corn is the way to go. Trader Joe’s sells a really delicious one that I purchase fairly regularly.
  • Avocado – The avocado serves as a source of fat for this salad. It adds both richness and creaminess. You will want to chop it up into small cubes so that you get delicious avocado flavor in every bite.
  • Cucumber – The cucumber is a refreshing and delicious add-in to this salad.
  • Roma Tomato – The tomato adds a ton of flavor and color to this black bean and corn salad. You’ll want to chop it up before adding it to your salad.
  • Vegan Cheese – The vegan cheese is a crucial ingredient for this black bean and corn salad. It adds a ton of flavor to your mixture and it finishes off the dish quite nicely. My two favorite vegan cheeses to pair with this recipe are vegan parmesan shreds and vegan feta cheese. Both of these can be found at Trader Joe’s. Whole Foods probably has similar options as well.
  • Salt – The salt will be added to your own personal taste for additional flavor.
  • Pepper – The pepper is another ingredient which you will add to taste.

Ingredients
  

  • 1 cup black beans (drained and rinsed)
  • 1 cup sweet yellow corn
  • 1/2 cup avocado (cubed)
  • 1/2 cup cucumber (finely chopped)
  • 1/2 cup tomato (finely chopped)
  • 2 – 3 tbsp vegan cheese (I like feta or parmesan)
  • salt (to taste)
  • pepper (to taste)

Instructions
 

  • Add the black beans, corn, cubed avocado, chopped cucumber, and chopped tomato to a large mixing bowl.
  • Mix to combine thoroughly.
  • Add salt and pepper to taste, then mix again.
