Ingredients
  

  • 1 cup black beans (drained and rinsed)
  • 1 cup sweet yellow corn
  • 1/2 cup avocado (cubed)
  • 1/2 cup cucumber (finely chopped)
  • 1/2 cup tomato (finely chopped)
  • 2 - 3 tbsp vegan cheese (I like feta or parmesan)
  • salt (to taste)
  • pepper (to taste)

Instructions
 

  • Add the black beans, corn, cubed avocado, chopped cucumber, and chopped tomato to a large mixing bowl.
  • Mix to combine thoroughly.
  • Add salt and pepper to taste, then mix again.
