Good morning friends! With the spring season finally here, I thought it would be fun to share a recipe centered around one of my favorite ingredients – fresh berries. During the spring and summer, fresh berries tend to be cheaper and super sweet. So, I like to incorporate them into a lot of my plant based meals and snacks during this time. The simple salad recipe that I’m about to share with all of you is just one example of an easy way to do exactly that.

Today’s salad recipe is packed with plant based protein thanks to the vegan chicken. It is also filled with other micronutrients from veggies like fresh greens. As many of you know, I really enjoy making salads during the work week because they are quick and easy to whip up. So, without further ado, let’s dive right into some quick things to note for this recipe. Then, we will go through the full list of ingredients you will need to make this vegan strawberry chicken salad a smashing success!


What Dressing Goes Well With This Salad?

There are a number of different dressings that pair really well with this vegan strawberry chicken salad. The one that I like most is green goddess dressing. I especially love the one from Trader Joe’s. It has water, avocado, apple cider vinegar, green onions, lemon juice, chives, parsley, olive oil, yellow onion, basil, garlic, sea salt, and black pepper. I also think that poppyseed dressing goes well with this salad because it is on the sweeter side. The flavors blend really nicely with the strawberries.


What Pairs Well With This Salad?

I love to eat this salad with some avocado toast or a simple veggie sandwich. Or, to make the salad a bit more filling, you can throw in some beans/lentils, rice, leftover pasta, etc. There are a ton of different options to pair this salad (or really any salad) with, so don’t be afraid to get creative and use any leftovers you may have sitting in the fridge.

Vegan Strawberry Chicken Salad – Ingredients

  • Fresh Greens – The first ingredient you will need for this salad recipe is, of course, the fresh greens. I used cruciferous crunch mix from Trader Joe’s (it is a blend of kale, cabbage, Brussels sprouts, and broccoli). However, you can use whichever greens you prefer or have on hand. Lettuce and spinach also work really well as a base for this salad.
  • Vegan Chicken Nuggets – The next ingredient you will need for this recipe are some vegan chicken nuggets. Again, you can use whichever brand you prefer. For this recipe, I used the Morningstar Farms brand of plant based chicken nuggets.
  • Bell Pepper – The bell pepper adds a ton of flavor, color, and crunch to this salad. I like to use red, orange, or yellow bell pepper for this recipe. This ingredient will be chopped up and added to the salad.
  • Fresh Strawberries – The fresh strawberries are another essential ingredient you will need to make this salad. They add color, flavor, sweetness, and nutrients. I used a miniature cookie cutter to cut my strawberries up into little flower shapes :).
  • Grape Tomatoes – The grape tomatoes are another tasty ingredient you will want for this recipe. I absolutely love tomatoes, so I had to include some in this salad. They will be chopped up just like the other fruits and veggies.
  • Avocado – The avocado adds a ton of richness to this recipe. It is one of my favorite ingredients to use in salads, and this vegan strawberry chicken salad is no exception.
  • Nutritional Yeast Seasoning – The nutritional yeast seasoning adds some nutrients and a slight nutty/cheesy flavor to this salad.
  • Green Goddess Dressing – The dressing is the finishing touch which adds some much needed moisture and flavor to this salad. I used the green goddess dressing from Trader Joe’s, but any green goddess dressing (or something similar) will work.

Ingredients
  

  • 2 cups greens of choice (I used cruciferous crunch mix)
  • 3 vegan chicken nuggets (I used Morningstar Farms brand)
  • 1/4 cup chopped avocado
  • 1/4 cup fresh strawberries (finely chopped)
  • 1/4 cup grape tomatoes (finely chopped)
  • 2 tbsp fresh chopped bell pepper (I like red, orange, or yellow bell pepper)
  • 1 tsp nutritional yeast seasoning
  • 2 tbsp green goddess dressing (or similar dressing)

Instructions
 

  • Cook the vegan chicken nuggets per the package directions, then set them aside to cool for a bit.
  • Add the greens, avocado, strawberries, tomatoes, bell pepper, and nutritional yeast seasoning to a salad bowl.
  • Chop the vegan chicken nuggets into small cubes, then add them to the salad.
  • Pour the dressing on top of the salad.
  • Mix everything well to combine.
  • Dig in and enjoy!
