Good morning friends! Today, I thought I would share one of my new favorite lunch recipes. I have been really into pita pocket sandwiches recently, and I have come up with a really tasty combination that I just have to share.
This vegan chickpea, hummus, and veggie pita bread sandwich combines some of my favorite ingredients, such as fresh tomatoes, spinach, chickpeas, and hummus, to form a truly tasty meal. Best of all, this recipe comes together in just minutes. If you are looking for a quick and delicious lunch option to take with you to work, this might be just the recipe for you.
Now, let’s go through some quick things to note as well as the list of ingredients you will need to make this vegan chickpea hummus pita pocket sandwich a smashing success.
What Goes Well With Pita?
There are many different ingredients that pair extremely well with pita bread. One of the most obvious ones is hummus. However, I also enjoy pita bread with peanut butter and banana or mashed avocado.
When making a pita pocket sandwich, I like to include a spread such as hummus and/or mashed avocado, as well as a ton of veggies. I also like to add a protein source such as beans or cooked tofu. With this recipe specifically, I added seasoned roasted chickpeas. There are so many different ways you can enjoy pita bread, and these are just a few of my favorite ones.

Essentially, a pita pocket sandwich is made very similar to a wrap or traditional sandwich. You can stuff it with veggies, a protein source, spreads, and the list goes on.
Depending on what sort of flavor you are going for with your pita pocket sandwich, you might add hummus and veggies, tofu, vegan cheese, etc. Sometimes, I even like to make a sweet pita pocket stuffed wtih peanut butter and banana.

Vegan Chickpea Hummus Pita Pocket – Ingredients
- Whole Wheat Pita Bread – The first ingredient you will need for this recipe is the whole wheat pita bread. You can use whatever pita bread you’d like. I used the whole wheat pita bread from Trader Joe’s.
- Crispy Roasted Chickpeas – This is another important ingredient which adds a ton of flavor to your pita pocket sandwich. If you don’t want to make roasted chickpeas, you can easily sub canned chickpeas that you have drained and rinsed. I used this roasted chickpeas recipe on my blog.
- Spinach – The spinach adds nutrients and a nice crunch to your pita sandwich.
- Chopped Roma Tomato – The chopped roma tomato adds flavor, color, and nutrients to this pita sandwich. Tomatoes are one of my favorite sandwich add-ins.
- Cucumber – The sliced cucumber adds a nice crunch to this pita pocket sandwich.
- Vegan Feta Cheese – The vegan cheese adds flavor and texture to this pita pocket sandwich. I used vegan feta cheese that I purchased from Trader Joe’s.
- Nutritional Yeast Seasoning – The nutritional yeast seasoning adds a slight nutty/cheesy flavor and a little bit of vitamin B12 to your pita pocket.
- Mashed Avocado – The mashed avocado adds a source of healthy fat and a ton of flavor to this recipe. It is the first key spread that goes into your pita pocket sandwich.
- Hummus – The hummus adds richness, flavor, and creaminess to this recipe. It is one of the most important ingredients that you definitely don’t want to forget. I used a roasted pine nut flavored hummus, but you can use whichever kind you enjoy most.

Easy Vegan Chickpea Hummus Pita Pocket
Ingredients
- 1 whole wheat pita pocket (I used Trader Joe's brand)
- 1/2 cup roasted chickpeas
- 1/4 cup mashed avocado
- 1/4 cup tightly packed spinach
- 1/4 cup chopped roma tomato
- 1/4 cup thinly sliced cucumber
- 1 oz vegan feta cheese (I used Trader Joe's)
- 1/4 tsp nutritional yeast seasoning
- 2 tbsp hummus (I used roasted pine nut hummus)
Instructions
- Cut the pita bread in half and toast both halves for a few minutes.
- Spread the mashed avocado and hummus along the inside of both halves of your pita pocket.
- Evenly fill both halves of your pita pocket with the roasted chickpeas, spinach, sliced cucumber, chopped tomato, vegan feta cheese, and nutritional yeast seasoning.
- Dig in and enjoy!
