- 1 whole wheat pita pocket (I used Trader Joe's brand)
- 1/2 cup roasted chickpeas
- 1/4 cup mashed avocado
- 1/4 cup tightly packed spinach
- 1/4 cup chopped roma tomato
- 1/4 cup thinly sliced cucumber
- 1 oz vegan feta cheese (I used Trader Joe's)
- 1/4 tsp nutritional yeast seasoning
- 2 tbsp hummus (I used roasted pine nut hummus)
Cut the pita bread in half and toast both halves for a few minutes.
Spread the mashed avocado and hummus along the inside of both halves of your pita pocket.
Evenly fill both halves of your pita pocket with the roasted chickpeas, spinach, sliced cucumber, chopped tomato, vegan feta cheese, and nutritional yeast seasoning.
Dig in and enjoy!
