Ingredients
  

  • 1 whole wheat pita pocket (I used Trader Joe's brand)
  • 1/2 cup roasted chickpeas
  • 1/4 cup mashed avocado
  • 1/4 cup tightly packed spinach
  • 1/4 cup chopped roma tomato
  • 1/4 cup thinly sliced cucumber
  • 1 oz vegan feta cheese (I used Trader Joe's)
  • 1/4 tsp nutritional yeast seasoning
  • 2 tbsp hummus (I used roasted pine nut hummus)

Instructions
 

  • Cut the pita bread in half and toast both halves for a few minutes.
  • Spread the mashed avocado and hummus along the inside of both halves of your pita pocket.

  • Evenly fill both halves of your pita pocket with the roasted chickpeas, spinach, sliced cucumber, chopped tomato, vegan feta cheese, and nutritional yeast seasoning.
