Vegan Banana Chocolate Blender Muffins

Good morning everyone. Today, I am so excited to share my simple and delicious vegan banana chocolate blender muffins recipe. This recipe requires simple ingredients which will be added to a blender and blended up to form a smooth muffin batter. Once the batter is formed, you simply have to fold in the chocolate chips and pop the muffins in the oven to bake.

For the base of these muffins, you will be using rolled or quick cooking oats. You will be blending them up to form the bulk of the dry base for this chocolate muffin recipe. If you want to make these muffins gluten free, make sure to use your favorite gluten free oats. Now, enough on that. Let’s go through a few quick things to note for this recipe. Then, we will dive into the full list of ingredients you will need to make this vegan banana chocolate chip blender muffins recipe a smashing success.

How To Make Banana Muffins Most, Light, and Fluffy

In order to make these vegan chocolate banana muffins light and fluffy, we will be using a few key leavening agents – baking powder and baking soda. The combination of these two ingredients ensures that your muffins don’t turn out too dense. As far as making these muffins super moist, the mashed banana takes care of that. And, as an added bonus, the overripe banana also adds a ton of sweetness to these muffins. Now that we have covered that, let’s go through the full list of ingredients you will need to make these banana chocolate blender muffins.

Banana Chocolate Blender Muffins – Ingredients

  • Rolled/Quick Cooking Oats – The first ingredient you will need for this recipe are the rolled or quick cooking oats. The oats act as the bulk of the dry base for these chocolate banana muffins. They will be blended up with the other ingredients to form a smooth muffin batter. If you want to make this recipe gluten free, make sure to use your favorite gluten free oats.
  • Overripe Banana – The next ingredient you will need for this recipe is the overripe banana. This ingredient adds sweetness as well as moisture to the muffins.
  • Cocoa Powder – The cocoa powder is essential for this recipe. It adds rich chocolate flavor to these blender muffins. A little bit goes a long way.
  • Coconut Sugar – The coconut sugar adds sweetness to these delicious vegan muffins.
  • Baking Powder – The next ingredient you will need for this recipe is the baking powder. The baking powder acts as the first key leavening agent for these banana chocolate blender muffins. This ingredient helps the muffins turn out nice and fluffy.
  • Baking Soda – The baking soda is the other essential leavening agent which helps these muffins achieve a light and fluffy texture.
  • Nut Milk – The nut milk is another key ingredient that you will need for this recipe. This ingredient adds moisture and creaminess to the muffin batter. I used unsweetened almond milk, but you can use whichever kind you prefer or have on hand.
  • Creamy Peanut Butter – Another ingredient you will need for this recipe is the creamy peanut butter. This ingredient adds richness, moisture, and stickiness to the muffins. I like to use natural peanut butter because I find that it is more drizzly and blends in with the other ingredients more easily. I also wanted to note that you can sub in another nut or seed butter if you prefer.
  • Pure Maple Syrup – Another ingredient you will need for this recipe is the pure maple syrup. This ingredient adds sweetness as well as moisture to these muffins.
  • Mini Semi-Sweet Chocolate Chips – The final ingredient you will need for this recipe are the mini semi-sweet chocolate chips. This ingredient adds a ton of sweetness and rich chocolate flavor to the muffins. You will want to gently fold the chocolate chips into the muffin batter before you bake the muffins.
