Ingredients
  

  • 1/2 cup quick oats
  • 1 tbsp peanut butter
  • 1 tbsp chocolate chips
  • 1/2 tsp cocoa powder
  • 1/4 tsp baking powder
  • 1/2 cup nut milk (I used unsweetened vanilla almond milk)
  • 1 tbsp pure maple syrup

Instructions
 

  • Add the quick oats, cocoa powder, baking powder, nut milk, and pure maple syrup to a high speed blender or food processor.
  • Blend until a smooth batter forms.
  • Gently fold two tsp of the chocolate chips into the pancake batter.
  • Pour dollops of batter onto a greased pan or pancake griddle.
  • Cook the pancakes for a few minutes until they start to bubble.
  • Flip the pancakes and cook them for a few more minutes.
  • Plate the pancakes.
  • Top the pancakes off with the peanut butter, the remaining chocolate chips, and more pure maple syrup if desired.
