Banana Bread Baked Oatmeal For One
Good morning friends. Today’s recipe is for a single serve banana bread baked oatmeal cake. This recipe is the perfect healthy snack or dessert. It is made with simple ingredients and it bakes in the oven in under 30 minutes. It is sweetened with fresh banana as well as pure maple syrup.
You guys know how much I love my baked oat recipes, and I find this one to be especially customizable since you can easily add toppings like walnuts, chocolate chips, nut butter, etc.
Now, let’s take a quick look at some recipe logistics as well as the ingredients you will need to make this banana bread baked oatmeal cake a smashing success.
How To Make Vegan Baked Oatmeal For One
The steps to making vegan baked oatmeal for one are really quite simple. Rather than baking your oat mixture in a large dish, you just grab a small oven safe ramekin and make a smaller portion of oatmeal batter than you would for multiple servings of oats. Since I am usually only cooking for myself (and sometimes my sister as well), I opt for small batch recipes most of the time.
For this vegan baked banana bread oatmeal cake recipe, you simply blend the oats to make an oat flour, and then mix in all the other ingredients. Next, you transfer your oatmeal mixture to an oven safe ramekin, top it off with some fresh, thinly sliced banana, and bake it until the desired consistency is achieved. It really is as quick and simple as that.
Now that we have gone over all the logistics, let’s discuss the key ingredients you will need to make this baked banana bread oatmeal recipe a success.
Single Serve Banana Bread Baked Oatmeal Ingredients
- Quick Cook Oats – The quick cooking oats are the first key ingredient you will need for this baked banana bread oatmeal cake. This ingredient will be blended up to form an oat flour. If you are looking to make this recipe gluten free, choose your favorite gluten free oats.
- Ground Flaxseed – The next ingredient you will need for this recipe is the ground flaxseed. This ingredient helps bind everything together, and it is also packed with plant based nutrients.
- Baking Powder – This ingredient acts as the leavening agent for this recipe to ensure your baked oatmeal cake turns out nice and fluffy. It is an essential ingredient that you do not want to forget.
- Cinnamon – The cinnamon adds a bit of spice and extra flavor to this banana bread baked oatmeal recipe. I used ceylon cinnamon, which I picked up at my local grocery store. It is a bit more pricy, but I personally like the taste of it better.
- Ripe/Overripe Banana – The next ingredient you need for this banana bread baked oatmeal cake is the ripe or overripe banana. The riper the banana is, the sweeter it will be. Just like with traditional banana bread, a banana with a yellow rind and brown spots is perfect for this type of recipe.
- Nut Milk – You will also need some nut milk for this recipe. I used unsweetened vanilla almond milk, which was absolutely perfect. However, you can use any nut milk you have on hand or like best.
- Pure Maple Syrup – Perhaps one of the most important ingredients is the pure maple syrup, which adds sweetness to this recipe. It is the perfect sticky, sweet substance which helps everything bind together. A little bit goes a long way here, and it turns out absolutely delicious.
- Optional Toppings – There are so many different toppings you can add to this banana bread baked oatmeal. A few of my favorites are walnuts, peanut butter, and dark chocolate chips. When I want to eat this banana bread baked oatmeal cake as a breakfast rather than a snack, I always top it with some creamy peanut butter. It is an absolutely delicious flavor combination.
