The easiest single serving vegan banana bread baked oatmeal.

Ingredients
  

  • 1/3 cup quick oats
  • 1 tsp ground flaxseed
  • 1/4 tsp baking powder
  • 1/8 tsp cinnamon (I used ceylon cinnamon)
  • 1/3 medium ripe or overripe banana (plus more for topping)
  • 3 tbsp nut milk (I used unsweetened vanilla almond milk)
  • 1 tsp pure maple syrup (plus more for topping)
  • optional toppings (walnuts, chocolate chips, nut butter, etc.)

Instructions
 

  • Preheat the oven to 350° F.
  • Add the oats to a high speed blender or food processor and blend until a fine oat flour forms, about 20 seconds.
  • In a mixing bowl, combine the oats, ground flaxseed, baking powder, and cinnamon.
  • In a separate bowl, mash your banana with a fork.
  • Add the banana, nut milk, and pure maple syrup to your dry mixture, and mix to combine thoroughly.
  • Transfer your banana bread oatmeal batter to an oven safe ramekin.
  • Top your banana bread oatmeal mixture with some fresh thinly sliced banana.
  • Bake for 25 minutes, or until your desired consistency is achieved.

  • Drizzle on pure maple syrup to taste.
