  • 1/2 cup quick oats
  • 1/2 small banana (ripe or overripe)
  • 1/4 tsp baking powder
  • 1/4 tsp cinnamon
  • 1/4 cup + 1 tbsp nut milk (I used unsweetened vanilla almond milk)
  • 1 tsp pure maple syrup

Maple Cinnamon Topping Ingredients

  • 1/2 tbsp creamy almond butter
  • 3/4 tsp nut milk (I used unsweetened vanilla almond milk)
  • 1/2 tsp pure maple syrup
  • 1/8 tsp cinnamon

Instructions
 

  • Preheat the oven to 350° F.
  • Add all oatmeal batter ingredients to a high speed blender or food processor.
  • Blend for a few minutes until a smooth oatmeal batter consistency is achieved.
  • Pour the oatmeal batter into an oven safe ramekin.
  • In a small bowl, combine the maple cinnamon topping ingredients.
  • Spoon the maple cinnamon topping onto your oatmeal batter in a spiral shape to form the cinnamon swirl topping.
  • Bake the oatmeal for about 20 – 25 minutes, or until your desired consistency is achieved.
