Ingredients
  

  • 1/3 cup quick oats (blended into a fine oat flour)
  • 2 tbsp chocolate protein powder (I used Orgain Simple in the chocolate peanut butter cup flavor)
  • 1/2 tsp rainbow sprinkles
  • 1/4 tsp baking powder
  • 1/4 cup nut milk (I used unsweetened vanilla almond milk)
  • 1 tbsp unsweetened applesauce
  • 1 tbsp creamy peanut butter (for topping)
  • pure maple syrup to taste

Instructions
 

  • Preheat the oven to 350° F.
  • Combine the oat flour, baking powder, and chocolate protein powder in a mixing bowl.
  • Add the applesauce and nut milk, then mix again until well combined.
  • Pour the mixture into an oven safe dish or ramekin.
  • Top the oatmeal mixture with the rainbow sprinkles.
  • Bake the oatmeal for about 20 minutes, or until a toothpick inserted comes out clean.
