Good morning everyone! Today I am sharing a simple yet refreshing recipe with all of you – a vegan strawberry banana zucchini smoothie bowl. This vegan strawberry smoothie recipe is made with just a few ingredients. It is essentially a super thick strawberry banana smoothie that sneaks in some veggies in the form of frozen zucchini. This recipe is dairy free, gluten free, and super refreshing.

When I first started testing this recipe, I knew that I would need to try a few different ratios of frozen fruit to zucchini. I wanted a thick and creamy texture, sweet and delicious strawberry banana flavor, and just a little bit of frozen zucchini for a nutrient boost.

The vanilla protein powder used in this recipe adds sweetness and flavor. By combining it with the other ingredients, you end up with a thick, creamy, and delicious vegan strawberry banana zucchini smoothie. Best of all, this recipe requires minimal prep time, so it’s ready to eat in minutes. Plus, the combination of strawberry and banana is a classic that is simply too enticing to pass up. Strawberries and ripe bananas go together like peanut butter and jelly.

The frozen strawberries provide a delicious strawberry flavor, creamy texture, and refreshing taste. It’s important to use frozen strawberries rather than fresh for two reasons. First, the use of frozen fruit ensures that the smoothie consistency turns out thick and creamy. Second, frozen fruit makes your smoothie bowl cold and refreshing. I used whole frozen strawberries, but you could also use sliced frozen strawberries to make the blending process a little bit easier.
  • Frozen Banana – The frozen banana adds creaminess and sweetness to this frozen smoothie recipe. Make sure to let the banana ripen before you freeze it for optimal sweetness. I like to freeze my bananas in chunks for easier blending as well.
  • Frozen Zucchini – The next ingredient you will need for this vegan strawberry zucchini smoothie is the frozen zucchini. I just sliced up some fresh zucchini into small pieces and placed the pieces in a reusable freezer bag. The great thing about this recipe is that adding a small amount of frozen zucchini doesn’t affect the taste of the smoothie at all. It’s an easy way to sneak in some veggies.

A few of my favorites include unsweetened coconut flakes, semi-sweet or dark chocolate chips, nuts, peanut butter, and homemade granola. The possibilities truly are endless here, so customize your smoothie bowl however you’d like!

Ingredients
  

  • 1 1/2 cup frozen strawberries
  • 1 medium ripe banana (frozen in chunks)
  • 2 – 3 tbsp frozen zucchini
  • 1 tbsp vegan vanilla protein powder (I used Orgain Simple in the creamy vanilla flavor)
  • 3/4 cup nut milk (I used unsweetened vanilla almond milk)
  • optional toppings (I used coconut flakes and mini semi-sweet chocolate chips)

Instructions
 

  • Add all ingredients to a high speed blender or food processor.
  • Blend for a few minutes until a smooth and creamy consistency is achieved, stopping to scrape down the sides as necessary to aid blending.
  • Transfer your smoothie mixture to a serving bowl.
