Today, I am sharing a simple and delicious recipe for a baked oatmeal cake that cooks in just 25 minutes. It is packed with blueberry and banana flavors. It is both sweet and satisfying, so it’s the perfect breakfast to enjoy on mornings when you aren’t in a rush and have a bit more time to prepare a meal.

Ingredients

  • 2 tbsp frozen wild blueberries
  • 1/2 medium ripe or overripe banana
  • 1/4 tsp baking powder
  • 1/4 tsp cinnamon
  • 1/2 cup water
  • 1 tbsp creamy peanut butter (for topping)
  • pure maple syrup to taste (for topping)

Instructions
 

  • Preheat the oven to 350° F.
  • Add the oats, 1/3 of the banana, cinnamon, baking powder, and water to a blender.
  • Blend for about 30 seconds, or until a smooth batter forms.
  • Gently fold in the blueberries.
  • Transfer the mixture to an oven safe baking dish.
  • Thinly slice the remaining banana and top your oat cake with it.
