French Toast Baked Casserole Recipe

Good morning everyone! Today, I am so excited to share a delicious breakfast recipe with you all. This is not my typical oatmeal or pancake recipe though. This recipe is baked in the oven to make a sweet and flavorful dish – French toast casserole.

I already have a simple, classic French toast recipe on this blog, but I thought I needed a new, unique take on French toast. This recipe is much different because it is baked rather than pan fried, and the bread is torn up into pieces rather than cooked in full slices.

In general, French toast is very nostalgic for me because it is a recipe my mom used to make for me as a kid on special occasions. It certainly wasn’t an every day staple in our household (I usually had cereal for breakfast), but on the rare occasions I did ask my mom to make it for me, she almost never said no.

In fact, I can’t recall a single time when my sisters and I asked for French toast and my mom declined. Of course, back then we loaded the French toast up with a pool of maple syrup and powdered sugar.

It was really more syrup than French toast back in those days, but now I make my French toast with some nutrient packed vegan staples, which makes it even more enjoyable.

This French toast casserole recipe is super healthy, flavorful, sweet, and delicious. The texture is on point, and the recipe is easy to prepare. Plus, it comes together much quicker than you might think, which is an added bonus. You guys know how much I love easy recipes that are also super delicious.


French Toast Baked Casserole – Other Notes

And as far as the bread goes, you truly can use whatever bread you like or have on hand. When I make French toast, I typically use a fresh, harder bread, like bakery fresh sourdough.

However, I was out of my sourdough when I decided to make this recipe, so I used a soft packaged whole wheat bread that I had on hand.

It honestly turned out incredible and it soaked up a ton of the liquid. Since it gets baked in the oven, you really don’t have to worry about the bread not getting cooked all the way, so the soft bread was actually fine for this recipe. I suspect a hard bread would work as well, and will likely be a little less mushy.

I have not tried this recipe with a harder bread, so I can’t say for sure how it would turn out. However, if you do try this recipe with a tougher bread or a stale bread, please leave a comment letting everyone know what you used and how it turned out, as I think it will be super helpful for others who want to make this dish!

French Toast Baked Casserole – Ingredients

  • Bread – I have already touched on this ingredient, so I don’t have much to say other than I used a soft, 100 percent whole wheat packaged bread which I bought from the grocery store.
  • Pure Maple Syrup – This ingredient serves as a source of unrefined sugar to sweeten up the entire recipe and enrich that classic French toast flavor. Maple syrup also screams breakfast food.
  • Cinnamon – This spice is one of my absolute favorites, so it is perfect for this recipe. It brings out the sweet notes and adds a little something special to the dish.
  • Unsweetened Applesauce – The applesauce adds natural sweetness and moisture to the recipe, so it is the absolute perfect ingredient to add to the French toast casserole.
  • Mashed Banana – The mashed banana adds extra sweetness to the recipe in a natural, unrefined way. It is one of my favorite additions to sweet, baked recipes, and this French toast casserole is no exception.
  • Ground Flaxseed – The ground flaxseed helps the entire French toast casserole stick together, so it is a key ingredient for this recipe.
  • Nut Milk – The nut milk serves as the liquid to allow the bread to soak up the mixture. It is the final key ingredient you will need for this recipe.

Ingredients
  

  • 2 slices bread of choice (I used Nature's Own 100% whole wheat bread)
  • 1/4 overripe banana (mashed)
  • 1/2 tbsp unsweetened applesauce
  • 1 tsp ground flaxseed
  • 1/4 tsp cinnamon
  • 2 1/2 tbsp nut milk (I used unsweetened original almond milk)
  • 1/2 tsp pure maple syrup
  • 1 tbsp nut butter (for topping, I used peanut butter)
  • powdered sugar (optional, for topping)

Instructions
 

  • Preheat the oven to 350° F.
  • Tear/cut bread up into small square pieces.
  • In a large mixing bowl, whisk together all other ingredients.
  • Add bread to mixture and coat evenly.
  • Pour the French toast casserole mixture into a small square/rectangular pan and spread out evenly into a SINGLE layer. (If you don't do a single layer, the casserole will end up super mushy!)
  • Bake the French toast casserole for about 25 minutes, or until firm and golden brown.
