Garlic Olive Oil Vegetable Pasta Recipe

Good morning everyone! Today I am so excited to share another pasta recipe with all of you. You guys know how much I love pasta. I enjoy all the different shapes and varieties including chickpea, black bean, and red lentil pasta.

Not only do the bean and lentil pasta varieties cater to those who are gluten free, but each type of pasta has its own unique flavor. Each kind also provides its own set of nutrients. For example, when I want to boost the protein content of my pasta dish, I will typically opt for one of the bean or lentil pasta varieties.

For the garlic and olive oil vegetable pasta recipe that I am sharing with all of you today, I decided to use my favorite Banza chickpea pasta. The result came out absolutely perfect. I chose the rotini shape for this dish, and I highly recommend it.

Anyway, enough about the various pasta varieties. Let’s go ahead and take a look at the full list of ingredients you will need to make this simple yet delicious garlic and olive oil pasta dish.


Garlic Olive Oil Vegetable Pasta – Ingredients

  • Pasta of Choice – The first ingredient you will need for this recipe is, of course, pasta. You can use whichever pasta shape and variety you would like for this dish. I have tried brown rice pasta, whole wheat pasta, and chickpea pasta. If you are looking for some extra protein, I definitely recommend the chickpea pasta option.
  • Fresh Garlic – The fresh garlic adds a ton of flavor to this garlic and olive oil vegetable pasta dish. You will want to crush it or mince it very finely before adding it to your pasta dish.
  • Olive Oil – The olive oil adds a ton of richness to this vegetable pasta dish. It also enhances the flavor and helps all of the ingredients come together.
  • Zucchini – There are a number of key veggies that you will want to add to this pasta dish. The first one is zucchini, which is one of my personal favorites. This ingredient adds flavor and color to your pasta dish.
  • Tomato – Tomato pairs extremely well with pasta, and since there is no marinara sauce in this pasta dish, I think the fresh chopped tomato is the perfect add-in.
  • Yellow Onion – I know not everyone likes onions, but I personally really enjoy the taste of them. Specifically, I love the sweet yellow onions. So, I decided to add some chopped onion to this pasta dish. It pairs really well with all of the other veggies in this recipe. This is the last veggie that I chose to add, but I wanted to note that you can always throw more veggies into this dish if you’d like. For example, I like to add steamed broccoli to this dish, or even use it in place of the zucchini depending what I have on hand. Overall, the veggies add a ton of nutrients and flavor to your pasta dish, so don’t be afraid to get creative.
  • Dried Basil – The dried basil is an important spice that adds ample flavor to your pasta dish. You could also garnish your pasta with some fresh basil if you happen to have it on hand.
  • Dried Oregano – The oregano is another essential spice that is used in this pasta recipe.
  • Nutritional Yeast Seasoning – The nutritional yeast seasoning adds some vitamin B12 as well as a slight nutty/cheesy flavor to your pasta.
  • Salt + Pepper – The salt and pepper are two ingredients that you will want to add to taste. I like my pasta to have a bit of extra spice, so I usually opt for a little bit more pepper than most. When it comes to salt, I use less than most, as I have never been a huge fan of super salty foods. That’s why I always say to customize these two ingredients to your own personal preference.

Ingredients
  

  • 2 oz. pasta of choice (I used Banza rotini)
  • 2 tbsp chopped tomatoes
  • 2 tbsp chopped yellow onion
  • 2 tbsp chopped zucchini
  • 1 clove fresh minced garlic
  • 1/2 tsp nutritional yeast
  • 1/4 tsp dried basil
  • 1/4 tsp dried oregano
  • salt (to taste)
  • pepper (to taste)
  • 1 tsp extra virgin olive oil

Instructions
 

  • Add the pasta to a pot and cover it completely with water.
  • Bring the pasta to a boil, then cook covered until the pasta is soft, about 8 – 10 minutes.
  • Drain and rinse the pasta thoroughly.
  • Add the garlic, tomato, onion, and zucchini to a pan and sauté on low heat for about 5 minutes
  • Add the pasta and olive oil to a mixing bowl and coat the pasta evenly in the oil.
  • Add the dried basil, dried oregano, and nutritional yeast seasoning, and mix to combine thoroughly.
  • Gently mix in the sautéed vegetables, then plate the pasta.
  • Add salt and pepper to taste, then enjoy your pasta fresh and warm!
