Good morning everyone! I am back today with yet another overnight oats recipe. I have been on a roll lately with making overnight oats. They are just so quick and simple to create. Plus, you don’t have to cook overnight oats, which comes in clutch on busy mornings.

Today, I am sharing a pumpkin pie overnight oats recipe with you. This recipe might just be my newest overnight oats obsession, but it’s hard to choose a favorite flavor. They are all just so good.

While all of my overnight oats recipes have a similar base, each one has unique add-ins that completely transform the flavor profile. This pumpkin pie overnight oatmeal is sweet, creamy, and delicious.

Ingredients
  

  • 1/2 cup quick oats
  • 1 tbsp powdered peanut butter (I used PBfit)
  • 1 tsp chia seeds
  • 1/4 tsp pumpkin pie spice
  • 1/8 tsp cinnamon
  • 1/4 cup + 3 tbsp nut milk (I used unsweetened almond milk)
  • 2 tbsp canned pumpkin
  • 1 tbsp unsweetened applesauce
  • 1/2 tbsp pure maple syrup
  • 1 tbsp creamy peanut butter (for topping)

Instructions
 

  • In a mixing bowl, combine the oats, powdered peanut butter, chia seeds, pumpkin pie spice, and cinnamon.
  • Add in the nut milk, canned pumpkin, applesauce, maple syrup, and mix again.
  • Transfer your mixture to a mason jar and screw the lid on tightly.
  • Place your oats in the fridge overnight to set.
  • When you're ready to eat your oats, add the creamy peanut butter on top.
