However, I decided it was time to switch things up and make a cold overnight oatmeal recipe for all of you. I love prepping overnight oats for busy workdays because you can easily make them then night before and then store them in the fridge so that they are ready to eat in the morning. Overnight oats truly are the perfect no bake breakfast.

  • Chia Seeds – Chia seeds may be small, but they are certainly mighty, especially in overnight oats. Chia seeds are a vegan superfood that is packed with nutrients, fiber, and protein. Ingredients
  

  • 1/2 cup quick oats
  • 2 tbsp powdered peanut butter (I used PBFit)
  • 1/2 tbsp mini semi-sweet chocolate chips (plus more for topping)
  • 1 tsp chia seeds
  • 1/2 cup nut milk (I used unsweetened vanilla almond milk)
  • 1/2 tbsp pure maple syrup
  • 1 tbsp creamy peanut butter

Instructions
 

  • In a mixing bowl, combine the oats, powdered peanut butter, chocolate chips, and chia seeds.
  • Add the nut milk and pure maple syrup, and mix to combine thoroughly.
  • Transfer the mixture to a mason jar and screw the lid on tightly.
  • Place your jar of oats in the refrigerator overnight to thicken.
