Good morning everyone! I hope you’re having an awesome day so far! Today, I am going to share another lemon treat with you all, because I just love the flavor so much.


I also had a few lemons in my fridge that I needed to use up, and lemon cookies sounded far more enticing than lemon water, so here I am sharing this incredible recipe with you.

Moist Lemon Drop Oatmeal Cookies – Flavor/Texture

My goal was to make these lemon cookies chewy, moist, sweet, and super flavorful. By using some applesauce and a few other key ingredients, I ended up with a very moist cookie.


The batter looks much wetter than normal cookie dough, but don’t let that scare you. Since we are using oat flour, it still firms up nicely when it cooks. You’ll end up with amazingly sweet, firm, and moist cookies in just 10 minutes of bake time.


Although, I would suggest placing a piece of parchment paper on your baking sheet so that the cookies don’t stick to it. The parchment paper prevents that from happening, so it’s the method I used.

These are not your typical lemon cookies. Many traditional lemon cookies are loaded with sugar, dairy, and covered in powdered sugar. These, however, are healthy, super low in sugar, and packed with nutrients. You could honestly eat these for breakfast and avoid all the bad side effects like an energy dip or sugar crash.


These cookies not only taste amazing, but they nourish your body with good for you ingredients that are inexpensive and easy to find at any grocery store. So, let’s dive into what you’ll need to make this lemon drop oatmeal cookie recipe.


Moist Lemon Drop Oatmeal Cookies – Ingredients

  • Oat Flour – I always make my oat flour myself by grinding up traditional rolled oats in my NutriBullet blender. In a matter of seconds, you will have the perfect oat flour, so don’t worry about buying oat flour pre-made. I promise it’s super easy to make at home.
  • Unsweetened Applesauce – The applesauce adds natural sweetness and moistness to this cookie recipe. It is a crucial ingredient that prevents the cookies from getting too dry while they bake. It’s a great way to naturally sweeten many baked goods, so it’s a staple ingredient in many of my recipes.
  • Pure Maple Syrup – This ingredient adds more sweetness to the recipe. I try to use unrefined sugar as much as I can when I’m baking. A little bit of maple syrup is a perfect addition to this cookie recipe.
  • Baking Powder – This acts as the leavening agent in the recipe. While the cookies are pretty dense, they do rise a little bit as a result of adding a bit of baking powder to the dough.
  • Pure Vanilla Extract – The vanilla extract amplifies all the flavors already present in this recipe and makes the oatmeal cookies taste even better. I love adding this secret weapon to many baked goods.
  • Lemon Juice and Zest – You can’t have super flavorful, fresh lemon cookies without the lemon components. For this recipe, you will need both lemon zest and lemon juice. They pack in that lemony goodness in every bite, so they are key for this recipe.

    I highly recommend using fresh lemon juice. It tastes so much better than the stuff you can buy in a bottle in the store. You can tell the store bought one isn’t near as fresh, and I also think it’s pretty sour. When I was little, my parents used to buy it occasionally. It came in a lemon shaped squeeze bottle.

Ingredients
  

Lemon Cookies

  • 1 cup oat flour
  • 1/2 cup unsweetened applesauce
  • 1 tbsp pure maple syrup
  • 1/2 tsp baking powder
  • 1/2 tsp pure vanilla extract
  • 1 tbsp lemon juice (freshly squeezed)
  • 2 tsp lemon zest

(Optional) Glaze

  • 3 tsp Truvia cane sugar blend
  • 3/4 tsp nut milk (I used unsweetened vanilla)

Instructions
 

  • Preheat oven to 350° F.
  • Combine all dry ingredients in a mixing bowl.
  • Add liquid ingredients and mix thoroughly.
  • Gently fold in lemon zest.

  • Line a baking sheet with parchment paper.
  • Drop dollops of batter onto baking sheet, then smooth each one into a round shape with a spoon.

  • Bake cookies for about 10 minutes until firm and golden brown.
  • Mix your Truvia blend and nut milk to form a glaze and top each cookie with it.
