Today, I am sharing a pumpkin pie overnight oats recipe with you. This recipe might just be my newest overnight oats obsession, but it’s hard to choose a favorite flavor. They are all just so good.

Ingredients
- 1/2 cup quick oats
- 1 tbsp powdered peanut butter (I used PBfit)
- 1 tsp chia seeds
- 1/4 tsp pumpkin pie spice
- 1/8 tsp cinnamon
- 1/4 cup + 3 tbsp nut milk (I used unsweetened almond milk)
- 2 tbsp canned pumpkin
- 1 tbsp unsweetened applesauce
- 1/2 tbsp pure maple syrup
- 1 tbsp creamy peanut butter (for topping)
Instructions
- In a mixing bowl, combine the oats, powdered peanut butter, chia seeds, pumpkin pie spice, and cinnamon.
- Add in the nut milk, canned pumpkin, applesauce, maple syrup, and mix again.
- Transfer your mixture to a mason jar and screw the lid on tightly.
- Place your oats in the fridge overnight to set.
- When you're ready to eat your oats, add the creamy peanut butter on top.
