Good morning everyone! I hope you are all having a lovely day so far. Today, I wanted to share a few simple salad recipes that are super easy to make, loaded with flavor, and of course, vegan. These salads fit perfectly inside a mason jar, so they are the perfect ones to meal prep and store in the refrigerator. Then, when you’re ready to eat your salad, you can simply pull it out, pour the whole thing into a bowl, and drizzle on your favorite dressing. Then, you can dig right in and enjoy. I love prepping these on Sunday so that I have them sitting in the refrigerator, ready to eat on busy work days.

These mason jar salads are also extremely budget friendly, which is yet another reason why I love them. Now, let’s dive right into the details for the two salad recipes that I will be sharing with all of you today.

1. Mango Quinoa Black Bean Salad

The first salad recipe that we will be making today is a mango and quinoa black bean salad. This salad efortlessly blends sweet and savory flavors. The mango adds some sweetness to this recipe without overpowering it. It blends seamlessly with the quinoa, avocado, and fresh lime juice present in this recipe. Plus, this simple salad requires less than ten ingredients. It’s quick and easy to make, so I think you all are really going to love it. This salad pairs really nicely with a balsamic vinaigrette dressing. Of course, you can use whichever dressing you prefer or have on hand. However, I recommend a sweeter dressing to really bring out the sweet mango flavor present in this mason jar salad.

Ingredients
  

  • 1 cup baby spinach (tightly packed)
  • 1/2 cup cooked quinoa
  • 1/4 cup black beans (drained and rinsed)
  • 1/4 cup mango (chopped)
  • 2 tbsp avocado (chopped)
  • 2 tbsp cilantro (minced)
  • 1 tbsp yellow onion (chopped)
  • 2 tbsp dressing of choice (I like balsamic vinaigrette)
  • 1 tbsp lime juice (freshly squeezed)

Instructions
 

  • Place the quinoa in the bottom of the mason jar, followed by the cilantro, black beans, mango, yellow onion, spinach, and avocado.
  • Pour on the lime juice.
  • Screw the lid tightly onto the mason jar and give the salad a good shake.
  • Refrigerate the salad until you are ready to eat it.
  • When you're ready to enjoy your salad, transfer it to a bowl, drizzle on the dressing, and dig in!

Regardless, it is super tasty and easy to make. Again, you will want to serve this salad up with your favorite dressing. For this recipe specifically, I love using lemon tahini dressing. Again, you can use whichever dressing you prefer. However, I think a tahini or olive oil based dressing works best with this salad recipe. It pairs extremely well with the cooked sweet potato. Ingredients
  

  • 1 medium sweet potato (cooked and chopped)
  • 1/4 cup black beans (drained and rinsed)
  • 1/4 cup corn
  • 2 tbsp cilantro (minced)
  • 1 tbsp yellow onion
