baby spinach
(tightly packed)

cooked quinoa

black beans
(drained and rinsed)
1/4
cup
mango
(chopped)

avocado
(chopped)

cilantro
(minced)

yellow onion
(chopped)

tbsp
dressing of choice
(I like balsamic vinaigrette)

lime juice
(freshly squeezed)
Instructions
Place the quinoa in the bottom of the mason jar, followed by the cilantro, black beans, mango, yellow onion, spinach, and avocado.
Pour on the lime juice.
Screw the lid tightly onto the mason jar and give the salad a good shake.
Refrigerate the salad until you are ready to eat it.
When you're ready to enjoy your salad, transfer it to a bowl, drizzle on the dressing, and dig in!
