Black Bean Sweet Potato Salad

- 1 medium sweet potato (cooked and chopped)
- 1/4 cup black beans (drained and rinsed)
- 1/4 cup corn
- 2 tbsp cilantro (minced)
- 1 tbsp yellow onion
- 2 tbsp avocado (chopped)
- 2 tbsp dressing of choice (I like lemon tahini)
- 1 tsp lime juice
- 1/2 tsp olive oil
Layer the sweet potato, black beans, cilantro, corn, yellow onion, and avocado in a mason jar.
Pour on the olive oil and lime juice.
Screw the lid tightly on the mason jar and give the jar a good shake.
Store the jar in the refrigerator until you are ready to eat you're salad.
When you're ready to enjoy your salad, transfer it to a bowl, pour on the dressing, and dig in!
