1. Mango Quinoa Black Bean Salad
The first salad recipe that we will be making today is a mango and quinoa black bean salad. This salad efortlessly blends sweet and savory flavors. The mango adds some sweetness to this recipe without overpowering it. It blends seamlessly with the quinoa, avocado, and fresh lime juice present in this recipe. Plus, this simple salad requires less than ten ingredients. It’s quick and easy to make, so I think you all are really going to love it. This salad pairs really nicely with a balsamic vinaigrette dressing. Of course, you can use whichever dressing you prefer or have on hand. However, I recommend a sweeter dressing to really bring out the sweet mango flavor present in this mason jar salad.

Notes
I hope you all love this mango, quinoa, and black bean salad recipe. As I already mentioned, this salad has the perfect blend of sweet and savory flavors. Once you have this salad meal prepped and ready to go, you simply have to pour it in a bowl and drizzle on the dressing when you’re ready to enjoy it. Of course, we aren’t finished yet. There is one more mason jar salad recipe that I will be sharing in this post – a black bean and sweet potato salad.
2. Black Bean Sweet Potato Salad
The next salad recipe that I will be sharing today is my classic black bean and sweet potato salad. It is one of my all-time favorite salads because it is simple, delicious, and packed with flavor. It combines two of my favorite foods – sweet potato and black beans. This salad, unlike the first one, does not have a base of leafy greens. It is actually more of a nourish bowl than a salad. Regardless, it is super tasty and easy to make. Again, you will want to serve this salad up with your favorite dressing. For this recipe specifically, I love using lemon tahini dressing. Again, you can use whichever dressing you prefer. However, I think a tahini or olive oil based dressing works best with this salad recipe. It pairs extremely well with the cooked sweet potato. Now, let’s go through the full list of ingredients for this recipe, as well as the steps required to make this tasty black bean and sweet potato mason jar salad.
Black Bean Sweet Potato Salad
Ingredients
- 1 medium sweet potato (cooked and chopped)
- 1/4 cup black beans (drained and rinsed)
- 1/4 cup corn
- 2 tbsp cilantro (minced)
- 1 tbsp yellow onion
- 2 tbsp avocado (chopped)
- 2 tbsp dressing of choice (I like lemon tahini)
- 1 tsp lime juice
- 1/2 tsp olive oil
Instructions
- Layer the sweet potato, black beans, cilantro, corn, yellow onion, and avocado in a mason jar.
- Pour on the olive oil and lime juice.
- Screw the lid tightly on the mason jar and give the jar a good shake.
- Store the jar in the refrigerator until you are ready to eat you're salad.
- When you're ready to enjoy your salad, transfer it to a bowl, pour on the dressing, and dig in!
Notes
I hope you all enjoy this black bean and sweet potato salad. I love the flavor combination of the black beans, corn, avocado, and sweet potato in this recipe. The ingredients compliment each other really nicely. If you want to meal prep either of the simple mason jar salad recipes that I have shared today, you simply need a mason jar and the ingredients. If you want to make a week’s worth of salads, simply grab five mason jars and repeat the process five times.
The reason I like using the mason jars is because you can easily store them in the refrigerator without wasting too much space. Plus, you just have to dump the entire jar into a bowl when you’re ready to eat your salad, and then add your dressing of choice. Anyway, that’s it for this recipe. As per usual, I will be back with more content very soon.
