Good morning everyone! It has been a little while since I have shared a pie recipe with you all. So, that is exactly what I am going to do today! Today, we are making chocolate no-bake pie. This pie is silky, smooth, healthy, rich, and super decadent.

It’s also very easy to make and has a pretty short ingredients list, so even if you aren’t an experienced baker, you should have no trouble following along with this recipe and creating a super tasty treat.

When I was young, I loved pudding pie. Honestly, my family’s chocolate pudding pie recipe wasn’t really a recipe at all. We used to go to a bulk food store, buy a giant can of chocolate pudding (yes, it came in a can, and we’re talking a huge can, like 8 times the size of a normal can).

Then, we’d also buy a package of pre-made graham cracker crusts. And those were the only two ingredients. We would literally pour the pudding into the graham cracker crust, let it chill in the refrigerator for a few hours, and eat it with a spoon.

It was super messy and obviously didn’t stay together, but we loved it. Now, I look back on those memories and laugh. My parents definitely made my sisters and I some unique meals, snacks, and treats, but they fed us plenty of healthy, traditional recipes as well.

However, this pie recipe is nothing like the one from my childhood. It sets beautifully, so you can cut it into actual slices. It has an oat flour crust that is super healthy and delicious. Your taste buds will love the chocolatey richness of this pie, and it really is quite simple to make. So, without further ado, let’s take a look at all the ingredients you will need for this creamy chocolate pie.


Vegan Chocolate No Bake Pie – Ingredients

  • Pie Crust Ingredients – For the pie crust, we are going to keep it simple with oat flour, cinnamon, coconut oil, and nut milk. These four ingredients create the perfect crust for our chocolate pie.
  • Silken Tofu – Don’t be scared by the fact that there is tofu in the pie. It helps the pie achieve the right consistency and boosts the protein content.

    Plus, tofu tends to absorb the flavor of whatever you combine it with. Thus, you will taste all the chocolatey goodness, not the tofu itself.
  • Chocolate Protein Powder – The protein powder in this recipe adds that classic chocolate component. It’s one of the key ingredients. I chose the protein powder instead of cocoa powder to decrease the bitterness so that we wouldn’t need as much sugar.
  • Chocolate Chips – The chocolate chips bump up the richness and chocolate flavor of the pie even more. You can use whichever ones you like or have on hand for this recipe.
  • Nut Milk – The nut milk will help everything blend nice and smoothly and add even more creaminess to this recipe. I used unsweetened vanilla almond milk like I usually do when baking, and it was perfect!
  • Truvia Cane Sugar Blend – In order to keep the added sugar as minimal as possible, I like to use the Truvia blend. A little bit goes a long way, so it’s the perfect ingredient to complete the chocolate pie filling.

Ingredients
  

Pie Crust

  • 1 1/2 cups oat flour (you can grind up rolled oats in blender for a few seconds to make your own
  • 1 tsp cinnamon
  • 1/4 cup + 2 1/2 tbsp almond milk (I used unsweetened vanilla)
  • 2 tbsp coconut oil (melted)

Chocolate Filling

  • 300 g silken tofu (a little more than 10.5 oz)
  • 1/4 cup vegan semi-sweet chocolate chips (I like Enjoy Life)
  • 1/4 cup Truvia cane sugar blend
  • 2 tbsp almond milk (I used unsweetened vanilla)
  • 1 tbsp chocolate protein powder (I used Orgain simple chocolate peanut butter cup flavor)

Instructions
 

  • Preheat oven to 350° F.
  • Mix together your oat flour and cinnamon, followed by your almond milk and coconut oil until a thick dough forms.
  • Press dough into a greased 9 inch pie pan.
    Pie Crust
  • Bake for about 15 minutes or until firm.
  • Add your tofu, almond milk, Truvia blend, and protein powder to a food processor.
    Pie Mixture
  • Melt your chocolate chips in your microwave in 20 second intervals, stopping to stir occasionally, until a liquid consistency is achieved.
  • Add your melted chocolate to the food processor, then blend the entire mixture until smooth.
    Pie Mix
  • Once your pie crust is cool, pour your chocolate filling into the crust and spread evenly throughout.
    Whole Pie
  • Refrigerate overnight to allow the pie to firm up.
  • Serve your pie cold with your favorite toppings, like vegan whipped cream!

I think this recipe makes the absolute perfect healthier chocolate pie! I don’t make pie that often, so that’s why I don’t have very many pie recipes on this blog. However, when I am in the mood for pie, it’s nice to have quick and easy recipes like this one.

After making this, I felt inspired to create some other flavors as well. I’m thinking peanut butter pie for sure, and then maybe an apple or cherry pie as well.
