- 1/2 cup oat flour
- 1/2 cup rolled oats
- 3 tbsp creamy peanut butter
- 2 tbsp vegan semi-sweet mini chocolate chips (I used Enjoy Life brand)
- 1 tsp cinnamon
- 3 tbsp nut milk (I used unsweetened vanilla almond milk)
- 1 tbsp pure maple syrup
- 1/2 tsp pure vanilla extract
Preheat the oven to 350° F.
Combine the oat flour, rolled oats, and cinnamon in a large mixing bowl.
Add the vanilla extract, nut milk, and maple syrup, and mix well to combine.
Mix in the creamy peanut butter.
Gently fold in the chocolate chips.
Tightly pack the granola bar mixture into a parchment lined square or rectangular baking dish.
Bake the granola bars for about 20 minutes or until firm.
Let the granola bar mixture cool completely before cutting them into six equal sized rectangular bars.
